Recipe: Mango Salsa

2006_07_05-mango-salsa.jpgA friend left this recipe on my refrigerator while I was out. They must have known that mangoes are one of the two non-local items I cannot live without (avocados are the other.)

Mango Salsa
serves 4

2 cups plum tomatoes, seeded and diced
1 1/2 cups diced, peeled ripe mango
1/2 cup diced onion
1/2 cup chopped cilantro
2 tablespoons fresh lime juice
1 tablespoon cider vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves garlic, minced
1 jalapeņo pepper, stem and seeds removed, minced (optional)

Combine all ingredients in a bowl and serve with grilled fish or chicken. Also great on top of tacos.

I LOVE Mango Salsa, and use a very similar recipe. The only difference is that I leave out the garlic, and replace the cilantro with 1 T chopped fresh mint and 1 T chopped fresh basil. It's delicious on everything... even vanilla ice cream.

Its funny actually, mangoes and avocadoes are the two things we ALWAYS have in abundance in the house as well. I've taken to buying cilantro instead of parsley, limes instead of lemons and nearly always have a hot chili or two on hand most of the time - might have to give this one a go!

I like to make a mango salad using a similar recipe, adding red/orange/yellow peppers, using basil instead of cilantro (though that sounds tasty too) and balsamic vinegar as the acid component.

Delicious with any grilled meat...and I've tried it with chicken, pork, fish, even lamb!

I make mango salsa all the time and my recipe is almost the exact same, except that I use minced ginger instead of garlic.

I also add the zest from the lime to mine and don't add the garlic. Plus you need to let it sit for about an hour for the flavors to meld.

Ditto on adding the lime zest! And I'd recommend red (Bermuda) onion for mango salsa, instead of the white onion I use for normal pico de gallo.

Does the cider vinegar make a crucial contribution to the recipe, Sara Kate? Because I normally use solely lime juice for the acid.

i highly recommend the addition of tequila and avocado to the above recipe. it goes down perfctly with griled swordfish!

We love mango. We make salsa from row mango too, it's soury than ripe mango. It's good in summer time. I don't use vinegar. I use lemon juice little bit more.
