Breakfast for Lunch: Steel-Cut Oats with Dates, Coconut, Cinnamon and Pecans

We've waxed rhapsodic about steel-cut oats in the past and we're not about to quit. Steel-cut oats are far less gummy and thick than flat-rolled oats. Read all about the differences between oats here: What's the Deal With Oatmeal?

For this particular batch of steel-cut oats we boiled two cups of salted water, then threw in a cinnamon stick, a handful of chopped dates, and about a 1/4 cup of flaked coconut. We slowly stirred in one cup of steel-cut oats, turned down the heat and let them simmer for about half an hour.

When they were thick and creamy we heaped them in a bowl, sprinkled on some pecans, a touch of sugar, and some butter and milk. Breakfast for lunch!

The dates got all gooey and oozey when they cooked - rather like sweet, natural caramel in the oatmeal. You can see a bit of it in the photo above.

That recipe looks very delicious. My usual method for steel cut oats or cracked wheat is to boil three cups of water and a little salt the night before you want them. Add a cup of steel cut oats or cracked wheat, put the lid on, and take it off the heat. It's ready for breakfast; in the morning scoop out a bowlful and microwave it for a minute or two.

If you have leftover cooked steel cut oats, stick them in the refrigerator. They're great served cold with fresh fruit and yogurt. It's a little like Bircher Muesli.

If you don't like gummy quick oatmeal, use the following method:

Boil your water and salt. Shake the quick oats over the top of the boiling water. DO NOT STIR. You can shake the pot a little if you need to. After a minute, cover the pot, take it off the heat and let it sit for five minutes. Voila: perfect quick oats.

I like my oatmeal topped with pecans, dried cherries, and a little brown sugar.

That looks amazing. I've been trying to want to eat oatmeal more often...this should do it.

This morning I had steel-cut oats with a sprinkle of brown sugar topped with warm homemade chunky applesauce. Yum!

I make my steel cut oatmeal, put it in a bunch of recycled glass jars and heat in the microwave. When I eat oatmeal for non-breakfast (either lunch or dinner) I put cheddar cheese in there. I've been eating cheese in my oatmeal since I was a kid. Sometimes when I'm lazy and want a one dish meal and no crumbs, I put in peanut butter and jelly. Or PNut butter and cinnamon when I'm craving a peanut butter cookie.

I've been a rolled oats girl for a while, but this morning I tried steel-cut and they were amazing! I love the idea of dates and coconut. My usual breakfast is very similar to Lucrezia's - the chunky applesauce lightens up the oatmeal texture, and tastes awesome with some dried cranberries and raisins, too.

Oh my goodness you guys are right! I had a total mind blip when I wrote that. I was thinking walnuts and somehow pecans came out.

Oh yeah, this was great... especially the little bits of date and coconut! I made a double batch, and microwaved the rest this morning - it got much more solid, like polenta, and was great with cold milk poured over the top. Thanks for the inspiration!
