Recipe Review: Emeril's Fish Provencal

2008_07_10-Fish.jpgWhen we opened up this month's Everyday Food, there was one recipe that immediately leapt off the page. We had to try it.

 
 

This month's issue features both Martha and Emeril on the cover, demonstrating their new partnership. Emeril contributed several recipes, including this one for fish Provencal grilled in foil packets. It looked so simple, light, and easy that we had to try it.

It is utterly simple. Lay some cod or another white fish in heavy duty foil. Layer in sliced tomatoes, zucchini, and onion. Add some seasoning and salt and pepper, plus a drizzle of olive oil. Seal up and grill for 10-12 minutes.

And look! You can even do this in the rain!

2008_07_10-WetGrill.jpgWe were in a hurry so we skipped most of the recommended seasoning, including the lemon zest. We just dashed on a bit of salt, pepper, and paprika, and served the fish with lemon wedges on the side.

2008_07_10-Fish2.jpgThe result? Scrumptious! It was melting, moist, and tender, full of flavor from the onions and tomatoes. Everything was perfectly cooked and not overdone.

We were shocked - it was such an easy recipe! Highly recommended; we'd like to play around with it more soon.

Love the recipe reviews! Do you know if you can just double-up regular tin foil instead of using heavy duty?

You know, Emeril has always annoyed me but I can't fault the guy for his recipes. He's got one for pecan pie that's amazing.

What temp and time would you recommend for doing it in the oven? I'd love to make this but don't have access to a grill.
