Grill Tonight: Pancetta-Wrapped Asparagus

2008_07_22-Asparagus.jpgOK, OK - we know that the last asparagus of the season headed out of town a few weeks ago, which makes our lust for this recipe all the more cruel.

 
 

These are so simple, and so sublime. Wrap the thinly sliced pancetta around tender young asparagus so salty fat gets crisp while the asparagus stay tender. Everything tastes smoky, grilled, and porky. Anyone got a late patch of asparagus coming up??

Mmmmm I made that exact treat on Memorial Day with some thinly sliced prosciutto leftover from a very gussied up macaroni and cheese recipe! Can't wait for next spring ...

I have 10 lbs of pickled asparagus that I canned over Memorial Day weekend. I am not sure it would be the same but it is really good in the dead of winter.

Looks wonderful. I wish asparagus was still in season down South. I love it salted and roasted and will have to try grilling with pancetta some time.

I saw ample amounts of asparagus in an Amish farmer's market while visiting Penn last week, so I"m guessing the season there got stretched a bit.

My asparagus still hasn't gotten there yet. Maybe another year or two. I find it a little too salty so I'll wrap 2-3 asparagust together with 1 slice.
