Grill Tonight: Chicken, Rice, And Mango In Lettuce Wraps

Emma's post about more good uses for lettuce made us think of our favorite fish salad in lettuce cups. We were also thinking about grilled chicken, which led to this recipe...

These delicious wraps have a creamy ginger soy dressing made with mayonnaise, fresh ginger, soy sauce, rice vinegar and garlic - all poured over grilled chicken breasts layered with jasmine rice and julienned vegetables and wrapped up in Bibb lettuce leaves.

Like our tostada pick from yesterday these would be great for the vegetarian crowd too.

That's lettuce? Going by the golden colour I thought it was some kind of corn based or tortilla basket.

Beautiful styling but terrible photo editing. I'm sorry, I eat with my eyes first and the colours in this are way out of wack.

Rice certainly shouldn't be blue and lettuce should be green like this!

As consumers, we should be more critical of strangely edited photography.
