It's back to work this week, and since holiday leftovers should be long gone by now packing a home-cooked lunch takes a little more thought. But the most challenging part of taking a healthy lunch to work can actually be the last step - remembering to take it out of the refrigerator before you dash out the door!
Here's a tip from a friend on remembering your lunch, or anything else that can't be packed in your bag the night before.
Leave your house keys in the refrigerator, on top of your lunch bag. You can't walk out the door without your keys or your lunch.

I like that lunch bag! I have a hard time bringing lunch to work since I work in a gourmet food store, and often crave something different than what I brought. But if i had an awesome new bag, I think i'd be a little more excited. Where can I get something like that?

How apropos, I forgot my lunch this morning. : (
I made some extra pork with calvados and apples last night, planning to take some in today. That often works best for me-- making more of something the night before, because while it does require a little planning, it doesn't require extra time.

I usually make soup with vegetables from my CSA that I haven't had a chance to eat and some vegetable or mushroom stock. This week pumpkin soup made with leftover onion and mushroom stock and pumpkin from our jack'o'lantern at Halloween that I had in the freezer. I can usually get a few lunches with the soup and some toast before I get completely sick of it. Then it's sandwiches or leftovers.

I've done that key trick and have shared it with others! When I'm at work and want to remember something in the fridge, I just leave a not on my desk reminding me. I'm a tidy freak and always see the note before I go home.
Lunch today and for the next few days will be the leftover turkey chili I made last night and portioned out. I do leftover lunches a lot--quick, easy, cheap, and healthy.

I keep a bowl of Avocados and some almonds at work on my desk. They look pretty and are much healthier than candy.
