Don't Call Me Feta

Overheard in a brownstone Brooklyn gourmet shop ...

Woman Working Behind the Cheese Counter: Has Fay Tuh come in yet?

Manager With The Melodious Voice and Striped Apron: Who's Fay Tuh?

Woman Working Behind the Cheese Counter: You know her. Fay Tuh.

Melodious Manager: Oh, her. No, she hasn't come in yet.

The manager and his protégé were mocking a regular customer for mispronouncing "feta". Turns out Ms. Fay Tuh might night be as wrong as these foodies think. There is an alternate pronunciation of feta with a long a sound.

We believe helping customers learn how to appreciate their offerings should be part of the mission of all gourmet shops. Teach us how to appreciate your premium products, but don't mock us. Sy Syms says it best: "An educated consumer is our best customer."

Learn this lesson quick, Manager With The Melodious Voice, or we won't be back. Humiliation doesn't sell cheese.

Growing up in North Carolina, I thought it was pronounced that way for years, until I was made fun of for saying "fay-ta" at an Ohio cheese stand. Of course, people also pronounce "pharoah" with a long a sound where I come from, so I don't know if it's an alternate pronunciation thing as much as an accent thing.

When I was working at a restaurant I was once told by a Greek customer that it is pronounced fay-tuh. In fact, he made fun of me for saying feh-tuh.

For lack of a current Open Thread I thought I'd just post my question here. Sorry if this is a dumb question or has been asked before.

I just bought a large container of peeled garlic. It will take quiet a while for me to use it all so can it be frozen??

anne - the comments in this thread would probably be useful: http://kitchen.apartmenttherapy.com/food/tips-techniques/tip-using-peeled-garlic-016999

I believe if you keep garlic in the freezer it will lose some pungency. How long do you think it will take to use it? I keep mine sealed airtight in the fridge and it keeps pretty well.

faith - thank you! That was enormously helpful.

As I was standing in line waiting to pay for my garlic I kept looking at all that garlic and wondered if I was ever going to get thru it. Well, even if I only make it thru half it is worth the $2.
