Do you drink kombucha? We haven't tried it ourselves, yet, but as avid tea-drinkers we're cautiously intrigued. Kombucha is a Russian tea drink that has been fermented with a culture of yeast and bacteria. This kombucha colony grows into a large umbrella inside the fermenting tea - it looks like a huge floating mushroom.
The tea is supposed to have health benefits ranging from increased energy and sense of wellbeing to anti-cancer properties. Like other folk remedies, it's been adapted into bottled drinks marketed with an astonishing array of health claims.

when visiting a friend's apartment, she had several teajars of this stuff brewing. frankly, that yeast disc is the most repulsive thing i've see up-close in some time...and i'm all about homeopathy and natural remedies. but i like to be able to look at what i consume without feeling queasy. maybe for my weak stomach i SHOULD drink kambucha!

I drink the commercial stuff sometimes (I like GT Dave's the best - can be found at many markets) and brew my own. The flavor when fermented properly is like acidic (vinegary) sparkling cider. Its effects seem to be different on everyone. Good as a digestive aid and as a detoxifier, to name a couple. Lots of probiotic content. I am hooked on the stuff.

I discovered GT Dave Kombucha in the drinks section of the deli a few weeks ago and have been drinking it fairly often since then. I like the taste. Where can one get a starter kit to brew this stuff at home?

i like the kombucha (i forget the brand) from whole foods (i normally get it at family owned health food stores, though - they seem to be more knowledgable) - i love it but sometimes when i see the viscous snot strands at the top of the glass, i have to pick it out. so long as it's not in my face, i'll drink it.

I love the stuff! While overseas I brewed in a 7 gal. jug with a spigot and kept a continuous batch going. The "mama" ended up huge! When we moved into our little townhouse we down sized and there was no room for my tea brew. I put the "mama" in a gallon jar and kept it in the fridge for show and tell... most folks thought it was an organ of some type.
I recently picked up a sun-tea jar at Goodwill and am thinking of starting up again... great summer brew.

omg. i love kombucha. a coworker introduced me to it a few years ago, and it's great. it's sour and fizzy. gives me energy, makes me feel better when i'm sick. it's great.

I think the safety of the drink, especially the home brewed varieties should be seriously considered. Paul Stamets (mycologist and author of several highly regarded books) wrote an article on kombucha a few years ago. It can be found at http://www.fungi.com/info/articles/blob.html
