Good Question: Recipes for Giant Squash?

2008_12_15-GiantGourd.jpgContinuing on with our squash theme today, here's a question from reader matchbookhymnal. Apparently they have a giant squash to use up!

I bought a squash the size of a toddler at the farmer's market. After it had served its purpose as fall decor, I cut it up and found that it was much like butternut, only somewhat milder (probably due to its enormous size!). So far I have made squash soup, squash fries, and roasted squash with marinara, but I still have gallons of squash left! What else can I make with this giant vegetable?

 
 

Congratulations on your great abundance of squash! Not such a bad problem to have! A couple thoughts.

First of all, chop up any of it you can't use now and freeze it for using later in the winter. Just make sure to wrap it well and protect it from freezer burn.

In a related note, you can also cook it down and make squash puree which can also then be frozen. This is great for soups, casseroles, even quesadilla filling and sweet pies.

Readers, what else would you suggest for this giant squash (not pictured above, but we imagine it might look similar to one of these prize-winning gourds).

I bought a zucchini the size of a linebacker's calf at the farmer's market earlier this fall. I split it in half and stuffed it- cheese, tomatoes, whatever. You can wrap in foil and bake or just stick as is in the oven or on the grill. I bet italian sausage would be good with a butternut-like squash

Put it on pizza with caramelized onions and cheese, then put arugula on top when it's out of the oven. Or you could make ravioli using either homemade pasta or wonton wrappers (I've tried the latter, and it worked out really well). You could add cubes of it to risotto or shred it to make hash browns or latkes like these http://hungry-girl.com/chew/chewdetails.php?isid=1619 (hungry-girl.com has a ton of butternut squash recipes) You could also bake it into bread, muffins, pancakes, etc. like you would canned pumpkin.

this is such a great, timely post. we still have a squash haul from our garden just sitting on the counter. as decor, it is pretty but clashed with a small holiday get together I had last night. it is time to cook this stuff and use it!
