I was wondering if anyone knew of a good sweet carrot relish recipe? Something along the lines of the sweet carrots you get with Vietnamese food just a little more tangy and pickleish.
We have never made carrot relish, but we have been eyeing this recipe from Libby at Knit Tidbits. She says that she came up with this recipe because she was looking for a homemade replacement for a local product called Hell of a Relish. She also had a ton of peppers to be canned. The result sounds like it may be something of what you're looking for - a little spicy and definitely pickled.

Not sure about the exact relish you are thinking of but I may be able to give you something close.
Ingredients:
Nuoc mam
sugar
lime juice
minced garlic
basil
rice wine vinegar
method:
pour nuoc mam into a non-reactive sauce pan with minced garlic and reduce by about half. (be prepared to turn on the exhaust because the odor will be quite strong.)
pour reduced nuoc mam into a stainless steel mixing bowl and let cool to at least room temperature.
squeeze limes, straining the seeds out, add a couple splashes of rice wine vinegar and enough sugar to make a palatable "limeade."
whisk the limeade and the nuoc mam together, add the shredded carrots and basil and let sit in the fridge until you are ready to use.
hopefully this is close to what you are looking for! If you want it a littel spicy you could add a small amount of sweet chili-garlic sauce to the marinade.
