Good Question: An Impressive Dish with Fresh Eggs?

2009_06_12-Eggs.jpgHere's one last good question for the week from Julia; we had to sneak this one in before the weekend!

The farmers markets here in the Boston area are finally picking up, and I just bought some delicious fresh eggs at one of them. I am making dinner for someone that I want to impress this weekend, so I would like suggestions for things I could do with fresh eggs that would elicit gasps of astonishment at my cooking skills.

 
 

I've already got some really nice bread rising, so I'm looking for complementary things to prepare (salad? mushrooms? cheese?) and a somewhat coherent way to present it all. I usually just fry eggs quickly and eat them over greens with some sort of grain, but I'd like to pull off something a little fancier. Thanks!

Julia, what a fun dilemma to have. We can think of many things that show off fresh eggs. One of our favorite easy little dishes is baked eggs on top of spinach, prosciutto, and cheese. (Or another mix of seasonal veggies and meat.) If this is too brunch-y what about a breakfast pizza? (I firmly believe that this led my husband to propose. Well, maybe it was part of the equation, anyway.)

There's a recipe of eggs & morels baked in cream that I've always wanted to try on Martha Stewart:

I've also always wanted to try eggs baked in cream with tomato paste and serrano ham.

Another way I love eggs is Zuppa Pavese. Fry slices of bread in butter, place one slice in each bowl, top with a raw egg and a generous amount of parmesan, then pour piping hot beef broth over the top, which will cook the eggs. Very simple, but nice presentation might get the ooha and ahhhs you are looking for :-)

Creamed spinach in a big skillet, poach the eggs in the sauce, add some parmesan and run under the broiler or leave it to simmer on the burner, very easy and luxurious

What about a nice Shaksuka? Shaksuka is basically a spicy tomato and egg dish.

Quiche or tarts. Crustless works well too!

Use a touch of a light tasting cheese such as a young gouda, gruyere, or a good brie (so as to make the eggs the focal point) and maybe some wild mushrooms and arugula.

A nice soft omlette with gruyere and creamed spinach or mushrooms sauteed with pancetta. Serve with some spicy greens.
