Goes Well With Coffee: Bacon and Eggs

Why does coffee go so well with bacon and eggs? We most often think of coffee as a drink to be paired with something sweet, but then we have a cup with a hearty breakfast, like this recipe from Bon Appetit, and all the flavors wake up!

We're not entirely sure why, but there is something going on in coffee when it's had with a dish like this Poached Egg Crostone With Wilted Spinach And Bacon. Perhaps it's the way the fat and natural umami team up to bring out richness and flavor in the coffee. Or maybe it's just our breakfast imagination, but we think that there is something special about coffee, eggs, and bacon all in one place.

Wow, that photo of eggs and bacon is so magnificently perfect. The closest thing I have ever had to that was at the Atlas Cafe in Ponsonby, Auckland NZ! So memorable.
