Right now I'm loving quick refridgerator dill pickles we made from some summer cukes from our organic farmers market, and big heirloom tomatoes simply with a little salt and pepper!
I don't want to give up the summer yet!

Mmmm, apple pies are sounding really good right now but I'm still stuck on some of the last good peaches for peaches and cream. So yummy! I agree with steffie, I can't let go of summer quite yet!

This week, I've cooked up an Italian plum flognarde, made an heirloom tomato cream sauce as a topper for baked polenta, and plan on making sweet dumpling squash bread then grilling peaches with a fresh basil-garlic butter and slicing nectarines and pluots into green salads over the weekend. Next week, I'm hoping to use the last of the summer's melons in a chilled minty melon and tomato soup. It's a great time of year in the Pacific NW!

I am absolutely obsessed with heirlooms. My favorite in season dish right now is either homemade tomato pasta sauce with fresh tomatoes, mushrooms and peppers OR a little sandwich made of two slices of roasted eggplant with a slice of heirloom and a slice of mozz cheese on the inside. Bake for a few minutes, and you have cheesy, eggplanty, tomatoey goodness.

Beet chips. I slice up some beets really thin and toss them with olive oil and salt+pepper (with misc. spices depending on my mood) and toast them in the oven until crispy. My not-so-guilty pleasure of the season.

My favorite summer nosh this year has been an apple (red for sweeter or green for more tart preference) salad with lots of basil leaves, chopped almonds, with a splash of apple cider vinegar & honey dressing. It makes a quick, refreshing and easy side dish, or could be made into a main course salad with the addition of some cubed/ shredded roast chicken meat.
