When I studied abroad my Chilean host family made me a grilled mozarella and tomato sandwich on my first day. I drove my host mother crazy, begging for those sandwiches every day! "Por favor, un sandwhich con tomate!"

My friend's amazing sour dough bread, pesto, grilled eggplant and peppers from our garden, tomatoes and homemade mozarella. I make this often in the summer but have to use another frying pan topped with something heavy to press it!

Turkey ON thick bread. Put parmesaen cheese on the break and use a pannini press so the cheese crusts up the bread.

Tomato, mozzarella, basil, and onion on ciabatta is a classic for a reason. So delicious. From my childhood, I still love apple jelly and cheddar on white bread. When grilled, the apple and cheddar just meld. Great way to get an apple pie fix. Not healthy, but so good.

seedy grainy sliced wheat bread buttered and dragged in grated parmesan on the outside swiss, jack, thin tomato and spinach leaves inside. the parmesan gets brown and crispy and the sharp/cool cheese combo inside with the soft thin tomato and wilted spinach. oh ya.

I have a toss up - and two very different tastes. I love them both depending on my mood: tomato with fresh and milky mozzarella and fresh basil and a bit of cracked pepper on focaccia. The second one is a traditional reuben on rye. YUM!!!!!

BLT, mayo, lettuce and all! The mayo get warm, almost like a hollandaise, and the lettuce is almost like spinach when it is cooked!

I've worked at two different Italian restaurants as a cook and have made thousands of these.

Other favorites are reubans and tuna melts.
