My favorite summer pie is a Georgia Peach Pie. During the hot months of July and August, the peaches start rolling in the farmer's markets: juicy and tender, with vivid red seeds. My pie uses peach halves instead of quarters and they're stacked in a deep pie dish. The result is amazing fruit pie, with pink and yellow colors.

in the off years for dewberries, strawberry (either cold or no-bake).

rhubarb frangipane pie. traditionally the frangipane or almond cream is paired with pears because the subtlety of the pears balance out the extremely sweet cream. but since it is summer and rhubarbs in season, resoundingly tart and flavorful, i think it would provide a nice contrast to the frangipane.

Rhubarb. Every year I visit my grandma near my birthday and we make a rhubarb pie with rhubarb from her garden together. She has a wonderful set of different size pie pans and we also have little extra crust that we make into a cinnamon and sugar pie.

Cherry. And Lemon Meringue. Both because of my mother. Her birthday is right around the 4th of July and growing up we used to have big bbqs to celebrate both. She would always make a mile high lemon meringue that would knock your socks off, from scratch no less. Cherry pie is her favorite though and this year I aim to bring her a homemade one straight from my kitchen in SF to hers down in Long Beach to celebrate.

What, no one's mentioned key lime? Maybe not exactly "in season," fruit-wise (and generally comes out of bottles and cans -- I know, yuck), but it always reminds me of my summers in Florida...

Peaches and Cream pie. It satisfies fruit lovers, cake lovers and pie lovers alike in one sweet, creamy bite.

There's variations of this pie on sites like allrecipes.com (which use canned peaches, instant pudding, etc.) but nothing beats my mom's version with fresh peaches.

I imagine this would be fantastic with strawberries, too.

Fresh Peach Pie!!YUM

Sour cream raisin, since it's almost Father's Day. It wasn't until I moved away from home that I realized my dad's favorite pie was almost unknown in the outside world! But it's a great pie, especially with meringue.

I've never baked one, but am curious to try out a stawberry and rhubard pie.

Rhubarb-Pineapple with a crumb topping... it has canned crushed pineapple... sweet but with a tang.

Texas Peach Pie, easy on the sugar, with home made vanilla bean ice cream, also just lightly sweet.

Chocolate mousse, or banana cream. Both disgustingly easy for pie, and don't require me to turn on the oven in the heat of summer.

I love this pie pan! My birthday is also in August, I have homemade raisin pie (if we can find it) instead of cake. I definitely need learn how to make it . My Mom use to make it before she gave up making pies. My Mom also use to make sour cherry from our trees we use to have. Wow! does that bring back sweet summer memories.

(Not that anyone asked, but peaches (among other fruits) exude lots of juice when they bake in a pie. If you include some dried fruit, it'll soak up the juice and thus make the pie less runny and the crust crisper (or at least, less soggy). The dried fruit doesn't have to match the fresh fruit.)

Warm razzleberry pie with a scoop of French Vanilla ice cream is the BEST! I use a 150-year-old pie crust recipe that uses one egg and vinegar, and comes out so flaky and flavorful. A combination of raspberries, blackberries and boysenberries make the yummiest and most nutritious summer pies. Memorable, and even more so with the beautiful Emile Henry pie dish.

Mmm, comparing pie to a summer's day? I'd bake blueberries in the green pie dish, and blackberries in the pink pie dish, and peaches and raspberries in the brown pie dish, and cherries in the blue dish. My favorites are cherry pie in the morning, and peach pie in the evening.

Mmmm makes me think of good southern peach pie, where you ask the vendors at the market if they've got any peaches too ripe to sell. Not only are they usually practically free, they make the best pie, giving out plenty of juice to make the filling just right.
I crave chocolate peanut butter pie, with the chocolate pudding made from scratch and the slightly salty, crunchy peanut butter swirled in, with fresh whipped cream on top melting slowly over the fresh pie... Delicious.

Given my current temporary digs in ireland, I'm also in a mind for savory pies. I'd have to make my trusty pie crust recipe a bit heavier to stand up to fillings like steak and mushroom or chicken and bacon... mmm!

This one is easy for me. Sour fresh blackberry pie served warm with homemade vanilla bean ice cream.

Now that's good eating. Almost all blackberry pies are overly sweetened and it destroys the natural flavor (IMHO). Serving it with the ice cream adds enough sweetness and contrast.

It's 6 a.m. and I'm craving pie already this morning! My favorite pie, year round, is apple, but fresh peach pie is absolutely wonderful in summertime.

Apple-Banana. That's right. Both. The bananas are so naturally sweet you barely have to add sugar.

Peaches and berries, cherry with almond or hazelnut crust, rhubarb, anything with almost no sugar added to the fruit. I'm moving from France back to the USA this summer, and this would sure help ease my transition!

probably Key Lime pie-made with REAL fresh Key limes-this is the trick,if you use any regular old limes,it tastes different.Key limes cost a bit more but worth it! Nothing like citrus pies in summer-they are so light and refreshing.

My Mother makes great pie, My Mother-in-Law introduced me to new pies, peach and blueberry and dewberry.
My Mother-in-Law passed away recently.
In her memory I will choose dewberry pie as my favorite summer pie.

There are so many local farms in our area with self-pick fresh from the vine. I'd take a lazy morning to pick some and run them home for pies, leftover would be made into jam.

I'm also ambitious: I'd like to make my first tart, cream-cheese filled berry tarts. I just love the contrast of sweet, crumbly crust with the slightly salt taste of the creamcheese filling. I always wanted to try out the tart, but since my pie dish broke long ago, I never got to buy a new one.

Not to dismiss the gorgeous Emile Henry pie pan, but my favorite summer fruit pie isn't a pie at all. The time and effort of formal crust, which the fluted edge really invites, is less important than the fresh fruit itself. So I go with a simple crisp or buckle: lotsa fruit, some sweetener and then a crust of oats, flour and shortening. I'd choose berries.
