I've always wanted to learn more about Spanish cooking after meeting a man from the Basque region at a conference. He praised his country's healthy and delicious cuisine. And you will need this grater to garnish with fresh cheese!

The tapa at a local restaurant that has a tomato sauce and cheese as a sauce with bread to dip in. Soooo, good. I think I need to learn to make that, for sure.

When my fiance and I were in Spain we went to this small little restaurant that had the classic fried potatoes con aoili (mmm), fried sardines (double mmm), and spanish tortilla (ahh!). But my favorite were the little olive oil poached octopus with a very rough parsley pesto thrown over at the end. SOOO freaking good. Then again, I am never one to turn up my nose at the pepper salads and manchegos. Ah, and quince paste too! Ok, I like it all. Give my Spanish food and see me smile. :)

An ex turned me onto a wonderful recipie for Mexican Roast Pork Shoulder in an old issue of Gourmet. I've been using it for feeding groups on special occasions ever since. Cheap and yummy!

i know a lot more about portuguese cooking than spanish, but I'm sure they eat octopus with raw garlic and hot sauce all over the iberian penninsula, and that's what I'll be eating on christmas eve. mmm.

Paella is pretty good, but I think I'd be happiest with an all Spanish cheese and meats plate.. Serrano ham, a quality Chorizo, artisan Manchego, Serena, Ibores, Pata de Cabra, Leonora, and Valdeon, mixed olives, and an olive oil torta.. YUM.

A simple tapa - bread with a piece of chocolate and olive oil drizzled on top, run under the broiler until the chocolate is soft and warm, with a bit of coarse sea salt sprinkled on in the end.

Oh I covet the grater. I know nothing about spanish food, but I'd love to learn. Don't believe I've ever had a Spanish empanada, but I have had Mexican, Argentinian, Chilean, Peruvian, Panamanian, and Filipino, and I can truly say I never met an empanada I didn't love.

I just visited Spain for the first time this fall... and loved it! Being a vegetarian who does not eat fish or seafood the menus were a little limiting but everything that I ate was great. My favorite, go-to entree ended up being the bocadillo de tortilla. So simple but so satisfying. Another new thing that I fell in love with was the fried padron peppers. Where will I ever get these in Wisconsin?

My favorite Spanish dish is one that I had in Barcelona on my "luna de miel" this spring. It involved a piece of crusty bread , toasted lightly, topped with a piece of extroadinary chocolate, olive oil and sea salt. the chocolate gets melty, and the salt and olive oil come together for my favorite savory/sweet desert. like a s'more, only better! I believe it was called "pan de xocolate."

When we went to Italy last year I learned how to slice vegetables in strips, raw, and serve with balsamic vinegar, and maybe pinenuts - this grater/slicer would make perfect starters and salads.

Tortillas... NOT the mexican corn flats, but the spanish ones: a souffle filled with potatoes and onions, sliced thin and served cold with other sides. Super easy and surprisingly delicious
