The tapa at a local restaurant that has a tomato sauce and cheese as a sauce with bread to dip in. Soooo, good. I think I need to learn to make that, for sure.
Or paella. Everyone loves paella.

When my fiance and I were in Spain we went to this small little restaurant that had the classic fried potatoes con aoili (mmm), fried sardines (double mmm), and spanish tortilla (ahh!). But my favorite were the little olive oil poached octopus with a very rough parsley pesto thrown over at the end. SOOO freaking good. Then again, I am never one to turn up my nose at the pepper salads and manchegos. Ah, and quince paste too! Ok, I like it all. Give my Spanish food and see me smile. :)

My favorite Spanish dish is one that I had in Barcelona on my "luna de miel" this spring. It involved a piece of crusty bread , toasted lightly, topped with a piece of extroadinary chocolate, olive oil and sea salt. the chocolate gets melty, and the salt and olive oil come together for my favorite savory/sweet desert. like a s'more, only better! Just came back from 2 weeks in Spain and the eating is amazing! From Middle Eastern inspired dishes in the south to incredible seafood in Barcelona and huate cuisine pintxos in San Sebastian and the Basque country. I loved sampling how different a tortilla de papa tasted everywhere and how easy it was to devour an entire serving of boquerones (fried sardines) like a bowl of popcorn. We had everything from tapas to sit down meals and lots and lots of beer, wine and cider. And I lost weight to boot! A wonderful country with a rich heritage which is reflected in their cuisine.

Sugar for dredging

There is nothing more Spanish than jamón serrano. This country ham is a national treasure enjoyed in Spain by all walks of life. You find jamones wherever you look-hanging in stores, bars, and even private homes.
