Leftover Easter Eggs? Make Egg Salad

Because we know that if this egg salad had actually been made with leftover, dyed Easter eggs, there would be subtle pink and turquoise stains floating around on our egg whites. But consider it a reminder of a simple, delicious way to use up those hard-boiled eggs.

We aren't too picky about the ingredients in our egg salad. We usually prefer just mayonnaise, salt, and pepper, but occasionally we'll throw in some celery seed or sweet relish — and if a deli decides to add dill, fine with us. We frequently eat egg salad for breakfast, considering it just as appropriate as scrambled or poached eggs and just as delicious on buttered toast.

We are, however, very picky about the size of the egg pieces. No big, slippery chunks for us. We like them small, relatively mashed up, and uniform throughout, which is why we use a handheld potato masher. It makes chopping the eggs in the bottom of a bowl so much easier and less messy than trying to slice them on a cutting board.

Of course, this also begs the question of whether or not you eat the eggs you dyed for Easter. We always did as a kid. Do you?

We had to institute a strict "no eating the eggs" rule for Easter, otherwise there would be none left by Easter morning. Dyed, yet to be dyed, they were all fair game for us.

I used to hate eggs as a kid, and when I was 8 my mom packed a leftover easter egg in my lunch. Instead of eating it, I stashed it in my backpack and forgot about it for a few weeks, until it stunk so bad that my teacher stopped class to hunt for the smell. After she found my backpack and the egg, she hung my backpack out the window to air for the rest of the day.

These days, I devil them and have them for lunch or dinner with a side salad.

This is the first year i did not dye any eggs..why..i don't know?! however we do still have devil eggs in the fridge, i don't know why i don't make them more offen. I just consider them more for the holidays.

I love egg salad, but I'm a bit peculiar about it. I can only eat egg salad that I make - if anyone else makes it (a deli, even my husband) I can't get it out of my head that there MAY be an unsee-able piece of undercooked egg yolk there. Any little bit of translucency makes me feel ill. So I frequently overboil my eggs until the yolks have a green ring. Still, I love egg salad and could eat it every day.

I never liked egg salad until my aunt made it for me a few months ago with fresh basil and served on toast. It is really quite something.
