In the previous photo, we have neatly stacked (and labeled) plastic containers of homemade duck stock. We roasted a duck in our Romertopf clay baker, and then made stock from the broth. It's a delicious substitute for chicken stock in the soups we've been making recently, and goes well in making mashed potatoes.
Top photo: in the background are tamales we buy at the Alemany Farmer's Market. They freeze beautifully and make a quick and easy microwaveable meal on evenings where we're too tired to cook. In the foreground are individual beef bourguignon and chicken pot pies from Bristol Farms, another quick and easy weeknight meal. Bottom photo: portions of key lime juice, Meyer lemon juice, and lime juice, and assorted artisinal bacon.
On the shelf: frozen catfish and tilapia from Sun Fat Seafood, frozen abalone, two large portions of crab stock, several large fillets of halibut that some friends caught in Alaska and brought back for us, and a loaf of artichoke bread. In the bottom drawer: portions of boneless chicken breasts, some escargot, and various assorted meat portions.

wow that's a big freezer.
My freezer basics: frozen plain yogurt cubes (to use as starter for making my own), corn, peas, homemade wheat bread (I make 3 loaves at a time), and always have some frozen meat for emergency pizzas (pepperoni, ham, etc.)

Spossberg - frozen yogurt for starter culture... Interesting! That never occured to me. Have you had success with this? I would think the freezing would kill the probiotics. Lemme know, I might want to try this!

damn. you could open a restaurant with that freezer.
I've got a few pieces of guanciale (pork jowls) that I cured and hung in the old dairy barn behind my old apartment (high enough so the rats couldn't get to it).

Spossberg - good idea for the yogurt starter!
As far as my freezer: a loaf of homemade bread, stock, green curry, veggie burgers, bread crumbs, and probably some way too old meat.

Hmm, from memory.... 3-4 pounds of duck fat, for an eventual confit. A quart or so of turkey stock from Thanksgiving, sigh. A few individually-wrapped slices of bacon, ditto pancetta. Half a container of beef taquitos from Trader Joe's, two sad ice-pops from last summer, two or three stray boca burgers, half a baguette plus a bag of baguette slices, a pound of ground beef, two dozen sweet Italian sausages, packed in baggies of 4 and 8, a bag of walnuts from oregon. The top tier of our wedding cake, nearly two years old (oops). I know there is other stuff in there; I should definitely check it out this weekend.
(We have a smallish counter-depth bottom-freezer drawer style.)

Bennyrogers & Ilovebutter: Yes it works, and I got the idea from another reader of this site. I've heard that re-using your yogurt over and over will eventualy lead to a "bad" batch of yogurt, and I don't want to take the risk. I buy a big tub of plain yogurt, freeze it in ice cube trays, then pop them into a big ziploc bag.

ilovebutter - Freezing does NOT kill lactobacilli (the bacteria in yogurt), nor will it kill many other kinds of bacteria. They just shut down, and, when thawed out, they wake up and function normally. Crazy little critters.
To answer the question, I have vodka, frozen berries, frozen spinach and peas, nuts, grated coconut, parathas, Amy's burritos, tomato sauce, individual portions of soup, sambar, chocolate buttercream frosting, and mini ciabattas in my freezer. Oh, and mango kulfi. Yum.

Frozen vegetables (peas?), frozen strawberries and blueberries, Monrningstar Farms soy "sausage," a big batch of homemade buckwheat pancakes, a Fresh Direct plain frozen pizza (emergency rations), a couple of quart ziplocks full of vegetable stock cubes, a loaf of sourdough bread, pre-made quiche shells (tonight I hope to able to say "a broccoli quiche and an artichoke quiche"), parmesan rinds that I use in veg stock, my husband's Tofutti Cuties, and ice.
Reading these lists, I'm shocked at my lack of gin. Before the hot weather hits, I will fix that.

I have about 8 jillion boxes of Quorn Chick'n Cutlets (both the goat cheese and cranberry and the gruyere varieties) As they are my I'm way too tired and hungry to make something proper meal of choice, and for a little while whole foods and all the other groceries that were carrying them stopped stocking them and I was quite sad, so when they had them again, I fort of over-bought just in case.
Other than that, I have some frozen peas, a box of Phyllo dough, a package of swordfish steaks I still haven't decided what to do with, and a pint of raspberry-champagne sorbet. I'm not a big frozen food person.

Thanks spossberg and raspberry eggplant - I will freezer some Stoneyfield Farm for future yogurt batches. Raspberry - I know that freezing will kill some bacteria, and slow the metabolic rate of others (we were just discussing this in my food science class). I didn't know about lactobacilli - thanks for the info!

I have:
an absence of vodka. My husband keeps reminding me we are out. We are also out of bagels, which are usually in the freezer.
Way too much ice cream, including: Whole Foods Hibiscus Sorbet, that new Honey Vanilla Hagen Dazs flavor, Black walnut, vanilla chocolate chip, plus plain vanilla and chocolate. Vanilla Rice Dream ice cream. Plus some Coconut ice pops. Tofutti Cuties. OK, I am officially embarassed. Everyone in the family likes different flavors best. What can I say?
2 pounds of frozen beef stew meat from Irv and Shelley's fresh picks (local, organic, grass-fed, delivered).
A few bags of frozen vegetables -- corn, peas, (plus cauliflower and sweet potato to puree and put in my son's mac and cheese)
Homemade frozen waffles and pancakes (we wrap up the surplus on weekends and then sometimes I give some to my son during the week in a pinch)
Butter
A few frozen Trader Joe's lunches such as the vegetable rice bowl and some burritos.
Pine nuts
Ice cube trays
Frozen raw shrimp
We recently ate our way through the frozen leftovers that were in the freezer.

My freezer is usually pretty empty unless I have a project going on that needs freezing. At the moment, I know I have ice ... some sectioned tomato paste, peas, IQF shrimp, a couple pieces of chicken, some chicken backs for stock (time to "stock up" this weekend!) ... up until last night, there was some Vanilla Honey Bee ice cream. Mmm ... there may be more after tonight's shopping trip! Oh, and there's the ice core for my IKEA pitcher--nifty thing for iced tea and lemonade!

Very interesting about the yogurt. I've never thought to freeze it, either. Every few months I just bought a new small container and used it as starter.
My freezer has: Trader Joe's puff pastry, some kind of veggie burgers, a box of veggie corn dogs (gross but my husband loves them), frozen peas, broccoli, spinach, edamame, corn, blueberries, and raspberries, a few different types of flour (rye, cake, graham, I forget what else), flax seed meal, overripe bananas, gin, homemade waffles, wheat bread, leftover barley soup. I think that's it.
It's usually pretty packed because the flour takes up a lot of room. I keep whole wheat in the fridge because I use it a lot, but the other types I freeze.

Kathryn, how come your p-touch labels stay on in the freezer? I have the same plastic tubs, but mine all fell off.
So, in addition to many fallen labels and some errant popsicles left from last summer (or maybe the one before) I have:
what remains of an organic free-range lamb we got from Maine
what remains of an organic free-range pig we got from New Hampshire
a few pieces of free-range beef from a local farm
duck breasts, duck legs, and at least one whole duck. It's sometimes hard to find, so I stock up
Assorted necessary Trader Joes items: Indian breads, Chinese dumplings, puff pastry etc.
A couple of week's worth of Homemade dog food (chicken thighs, potatoes, sweet potatoes, peas, green beans and broccoli in various combinations).
a bottle of Limoncello
my ice cream freezer tub
ice packs for sore muscles
I have a chest freezer and I'm too short to reach the bottom where meat and dog food are stored. I have sorted those things into canvas bags that I can lift out easily.

Dulcibella: Do you label your containers empty, dry, and at room temperature? Labeling anything cold, or even just filled with something chilled, means there's a layer of condensation which interferes with adhesion.

I should add that we try to keep a list on the fridge of what's in our freezer so that we don't have to open it and dig around to find out. It tends to get out of date as we forget to adjust it, but it does help give us a general idea of what's available.
