Magical Bread: Liz Bakes No-Knead Bread in a Hurry

We were flattered and so happy to see these great results from our No-Knead Bread in a Hurry recipe adaptation. Liz, also known as Pocketfarm at Flickr, tried a loaf and here's what she says:

I'm late to get on most bandwagons, and just made my first loaf of no-knead bread a couple of weeks ago, using this technique. I tried it again yesterday with half whole wheat, and it's even better. Seriously, great bread with no kneading?? It's magic!

I know kneading is good for stress relief and all that, but this is fabulous bread with very little effort. There's definitely room for all kinds of bread in my life.

Thanks for the shoutout, Liz! Go see all her beautiful photos of food and farming at her Flickr account. Also check out her Pocketfarm Etsy shop with its beautiful handspun yarn.

Hooray, I'm glad this works with whole wheat! Thanks for the report. The photos are gorgeous. Now all I need is a Dutch oven!

Great! Do remember that you can bake this in other things too - you don't have to have a Dutch oven.

We did a post on Dutch oven alternatives for No-Knead Bread here.

We make this bread at least once a week, AND we have recently started making it ALL whole wheat (add a little more yeast) with a mix of whatever seeds we have on hand... sesame, flax, golden flax, millet, sunflower seeds, poppy seeds, the list goes on...

after experimenting with about 20-something loafs, baked in various pots, i have a perfect one! It's my not so heavy frying pan with a lid! I baked it last night in my very tiny and temperamental vintage oven. It was my best bread since i get hooked on it last fall. It proves that you can bake it in practically anything, and trust me, i tried them all since i do not own dutch oven.

I've been doing the Artisan Bread in 5 minutes a Day method and it's awesome. Much more useful than the ny times no-knead recipe.

Posted about it here:

note that the a-b-in-5-a-day method requires no special equipment (ie no dutch oven), you can get your first bread the day you start, and you have dough for bread on subsequent days.

Fresh bread is one of my favorite things. I've never tried this no knead technique though. About how much active time working do you actually need to make it?

I got a dutch oven for Christmas, and thanks to the no knead method, we haven't bought bread from a store since.

Angorian, consider adding the recipe for 'artisan bread in 5 mins' a day to your linked page... Or post a link to the recipe here. (Only saw photos of your bread at the link you provided so far).

I don't really feel comfortable posting an unmodified recipe without permission.

The Kitchen did a review of the cookbook where they had permission to post one of the recipes from the book (though not the basic dough).

This article has the master recipe:

@ Andy2

Three minutes to toss together the ingredients and give them a quick stir, and no more than five minutes to shape it and put it in the oven. Honestly. I was astonished that something so easy could be so delicious.

Thanks Angorian! As I read the recipes and look at the photos, this whole thread is just making me salivate...
