Our recipe for easy, healthy wild mushroom pasta sauce below has us dreaming about a big mess of mushrooms tonight...
...and this photo from Hypnotic Aubergine plays right into that. You don't even have to make a quick sauce like ours; just sauté up some mushrooms (washed or unwashed) and garlic and toss them with fresh-cooked pasta. You're done in 15 minutes. Have a green salad and a glass of good red wine.

I've really been craving polenta lately, so I'm planning to make a sausage and mushroom ragout to put over it, topped with some crumbled queso fresco or feta cheese. The local food co-op has VT-grown mushrooms - very cool!
