Flickr Find: Arugula Salad with Watermelon and Feta

2008_07_14-watermelonsalad.jpgWhile we were browsing photos of watermelons this morning, we came across this beautiful salad — a nice blend of sweet watermelon with spicy arugula.

Flickr member chotda says this salad is made with arugula, watermelon, and feta, which we can see, and a red onion-raspberry vinaigrette, which we weren't expecting. It sounds delicious, though — we love fruit and onions together.

We've been eating a lot of salads with strawberries on top lately, but this is a new twist we're eager to try.

Anyone else have a favorite salad with watermelon?

I make a similar salad of cubed watermelon, crumbled goat cheese (the recipe may actually have called for feta, but I don't remember - I always sub goat cheese because I don't care for feta), and basil chiffonade. I usually just season it with a few squirts from a fresh lime, sea salt and pepper. I like the watermelon balls in the picture - I'll have to give that a try instead of cubes next time! Unfortunately I can't do the vinagerette because my hubby hates red onions...

I've been making a regular and yellow watermelon salad lately with suave de cabra goat cheese, mint, gaeta olives, pickled red onion, fried almonds, 25 yr. sherry vinegar and extra virgin olive oil:

The first thing I tasted on my last visit to NYC was a watermelon and arugula salad believe it or not!
