Look! Fresh Ground Organic Flour at the Ferry MarketSan Francisco

2008_12_01-Flour.jpgEatwell Farm has just started to harvest and mill their own organic flour. This lovely bag of whole wheat flour was ground just the day before and costs five dollars for the three-pound bag.

 
 

2008_12_1-grindingbyhand.jpgEatwell has a hand-crank mill at the market which is a great way to attract attention. Kids especially were interested in turning the crank and watching the flour come out. But the majority of the flour is ground at the farm using their new mill which produces about 30 pounds of flour an hour.

It seems like Eatwell is serious about offering grains in addition to their beautiful organic vegetables, pasture-raised eggs and lavender products. According to their web site, they've just planted eight acres each of oats, barley, triticale and Expresso Hard Red Winter Wheat and plan on adding grains and beans to their CSA offerings next year.

I'm really excited about working with fresh ground flour and will report back soon with my experiences!

That is really exciting!! I will have to look for that at the Eatwell stand (I am also in SF) so I can try my hand at whole wheat bread.
Having freshly ground wheat flour makes all the difference since the additional oil in the bran and germ causes whole wheat flour to go bad much, much faster than white flour. When the flour is old or kept in a warm cupboard (and the oils get rancid), goods baked with the flour have an noticeably off flavor.
Rose Levy Beranbaum recommends using whole wheat flour no more than 6 months after it it ground/purchased, and ideally prefers to grind it herself when she uses it for bread! (Whoa. That's commitment.)
I buy small quantities of whole wheat flour (like bob's red mill) and keep the whole bag in the freezer.

Oh how I would love to get this, but they don't have mailorder on their site. I so miss the farmers' markets in the Bay Area!

Awesome for you guys! The Boulder Farmers' Market (in Colorado) has a guy that will mill it for you at his stand. I love it!
