In addition to all the Indian corn, we saw this on our trip to the Greenmarket. It's a cute guide to all the different types of apples sold at the market, with details on how each tastes and what it's best used for. We couldn't get the whole display in one shot — see the other half, below...
There isn't a ton of differentiation between varieties (almost all are labeled either "sweet" or "tart"), but it's still a fun reference if you're wondering what's what among all those apples. And a few are labeled as being good for pie.

i had my first taste of honeycrisp apples this week. I was really excited when I saw them at the store because of all the raves it recieved on that favorite apple post. I feel bad that I didn't like it all that much. Too tart for me. i dislike tart fruit. I guess I'm sticking to gala and fuji.

I bought a bunch of apples from the greenmarket a couple of weeks ago, didn't keep track of awhich was which, and then amongst this batch found the best apple I've ever eaten: it was crisp, just tart enough, and kind of spicily floral. Very fragrant. Does anyone know what this mystery apple might be?

I would love to take a bite out of each of those and compare. Kind of like a wine tasting, but an apple tasting. Come to think of it, that would be a fun fall party!

The best apple I've found for a pie is Miltons! Sweet and they hold their moisture well..no soggy crusts or dehydrated apples.

I love the Macoun apples! I can't find them in Santa Cruz, CA. I brought a whole bag of them back with me in my carry-on last fall!

My favorite apple so far is the Green Dragon - @chusmabilly, its not tart AT ALL - just lovely. I would recommend it to anyone who can find it (I got it at Whole Foods in San Diego).
I've also recently been enjoying the Chieftain (good sweet tart balance), the Mohawk apple and the Blushing Gold.
This chart is sooo cute. I may need to make something similar for my website.
