Daily Preserves: How to Can 1000 Tomatoes

2007_10_19-Tomatoes.jpg

It's a little late for tomatoes, but we still had to take a look at Carl Tashian's blog entry from last summer: How to Can 1,000 Tomatoes. The man ended up with 64 jars of tomatoes, neatly peeled and sealed. He gives a list of things you need, and links to canning directions too. Plus he just makes it look easy.

I'm part of the CSA program at the farm where he got his tomatoes! I got only one box of those tomatoes and made sauce for freezing. Next year I'm going to try canning. Maybe not 1000.

That's awesome.

Just like the old days when people had to do it themselves.

Better flavor.

Better for you.

Educational.

Better for the environment.

Funny how modernization tricks us into thinking this is the wrong way of doing things.
