Easy Party Dessert: Cake Bites on Toothpicks

2009_01_30-CakeBites02.jpgHere's just one more idea for weekend entertaining, Super Bowl parties, or homey indulgence. Cake bites! These are nowhere near the sheer amazingness of the cake pops that swept the internet recently (see Bakerella et. al.). But it is a fun little way to serve cake without fussing with plates, forks, or even cupcake wrappers.

 
 

2009_01_30-Cake.jpgIt's easy: bake a sheet cake in a larger pan than usual. We used a jelly roll pan. This has the added advantage that the cake bakes much quicker, too. Then slap on some icing and stick the cake in the freezer. When you freeze a cake while it's still warm it gets very moist, and a little denser too.

Leave it in the freezer for 45 minutes or so, then take it out and cut into little chunks. You can even use cute cookie cutters if you're feeling industrious. Spear each piece with a toothpick and serve. Watch them disappear.

Banana Cake IV at AllRecipes. This is our go-to recipe; we've used it for years. It's how we learned the freezer-moistness trick too.

For the icing we used a potent combination of rum, molasses, cream cheese, milk, powdered sugar, and nutmeg. Whip and enjoy. Yum!

Niamh - I modified this cake by baking for 15 minutes less than the original recipe specified. It's hard to give precise instructions, though. A cake is generally done when it's golden brown and the middle springs back lightly when pressed.
