Mom is a genius, and I don't say that because it was just Mothers' Day. It's because she made me breakfast out of a leftover sweet potato a few days ago when I was downright spent after working 15 days straight. And it was amazing. Here's to moms.
Sweet Morning Potato
1 sweet potato, cooked
1/4 cup plain or vanilla yogurt
1 tablespoon pure maple syrup
2 tablespoons chopped walnuts (or other nut)
Warm the potato. Open it across the top, pushing the flesh slightly to rise out of the skin. Spoon on the yogurt, then the syrup. Sprinkle with nuts, and serve.

One of the easiest and best dinner that I make is a sweet potato taco. Everyone I tell thinks it sounds so weird (and I did the first time I heard it.) It is just like a taco, but intstead of using a taco shell you use a sweet potato. And I use litelife soy taco "meat" rather than beef. It is delicious and takes about 10 minutes to make.
This recipe reminded me of that.

I think my grandchildren might like this. I'm going to try it.
We make sweet potato hash for the morning - usually add peppers and onions with it, a bit of oil and toss them in the pan until carmelized. Delish.
