DIY Reception: 700 Truffles and Counting...

How do you roll 700 chocolate truffles? With lots and lots of help. We're elbow-deep in dessert preparations for a wedding reception we're cooking for this weekend.

One absolutely essential ingredient in amateur large-scale cooking is the enlistment of family and friends to help. We had a kitchen full of friends on Saturday, drinking coffee and eating breakfast cake - and helping us assemble massive quantities of wedding finger-food desserts. It felt like the 21st century version of a barn-raising!

 
 

It was a busy morning; all those hands helped chop 25 pounds of plums, roll 700 truffles, and roll, dip and decorate about 600 tiny cookies.

Watch for the rest of our tips and ideas on cooking for a big party or wedding reception yourself. We'll round up everything in one big post soon. It's not only possible to do this kind of thing yourself - it's fun, economical, and very rewarding if you have the space and time.

This is the second blog entry I've seen about truffles involving chocolate-covered hands. I will not be satisfied until I've had my hands covered in chocolate!

zomg, 700! I made about 50 truffles once and I was a mess when I was done. It's clear from these photos that your process is a little more refined, a little less of a free-for-all/freak-out. Good luck, Faith! You probably won't want to eat chocolate again for a little while, though . . .
