Recipe: Bermudian Rum Cake

2006_04_26-rum_cake.jpgWe celebrated the birthday of a Bermudian friend a few nights ago. On the menu were Dark & Stormies and Rum Cake, of course. Being with child, I did not gulp a D&S, but I did enjoy the cake. The recipe, in its original form, comes from the birthday boy's mother in Bermuda, who gets it from Bacardi. The host took some liberties with mom's recipe (she uses packaged cake mix), and developed her own version...

 
 

Bermudian Rum Cake

Cake:
1/2 cup milk
1/2 cup orange juice
1/2 cup vegetable oil
4 eggs, lightly beaten
1 Tbsp. grated orange zest
1/2 cup dark rum
2 cups flour
1/2 tsp. salt
3 tsp baking powder
1 1/2 cups sugar
1 pkg (3 3/4 oz) Jello vanilla pudding mix
1 cup chopped pecans

Glaze:
1 stick butter
1 cup sugar
1/2 cup dark rum

Preheat oven to 325

Mix milk, orange juice, oil, eggs, orange zest, rum, and set aside.

In separate bowl sift flour, salt and baking powder. Mix in sugar and pudding mix- make a well in center and add milk and oj mixture, mix well.

Sprinkle chopped pecans in a greased and floured bundt pan and pour cake mixture on top.

Bake for 1 hour at 325. Cool. Invert on plate, prick then spread glaze evenly over top. Do this in stages so that the cake has time to absorb all the glaze.

Glaze:

Melt butter in saucepan, once butter is melted add sugar. Bring to boil and stir constantly for 5 minutes. Remove from heat and add rum.

Thank you! I have been looking for a good rum cake recipe due to a recent craving that isn't going away. Now I only have to get a bundt pan. It was only a matter of time....
I'm guessing the amount of rum in the glaze can be increased?

Sure, give it a try - but I wouldn't throw the proportions out of whack too far - if anything, just make more glaze and pour more of it on. The butter and sugar help give the glaze body.

The rum in this rum cake really stood out. I licked the spoon (a few times) while I was making the batter, glaze, etc... and started to feel like I was having a mid-afternoon cocktail!

This recipe is very easy to make. I was finding a rum cake recipe and I found it. This recipe is so yummy to eat right now.

Made this for a family picnic. Absolutely flew off the plate - very yummy! The zest adds a nice light flavor to the cake. Not too heavy or dense.

A Dark and Stormy is the most popular drink in Bermuda. It consists of 1 part dark rum and 4 parts spicy ginger beer, with a lime garnish.

Dark and Stormys are made specifically with Gosling's Black Seal Rum and Barritts ginger beer, but you can experiment with other dark rums and ginger beers.

They are especially delicious in hot weather.

I am living in Dublin in Ireland and would like to make the Bermudian Rum Cake. What is Jello Pudding mix I never heard of it is there a substitute that I can get in my country or perhaps I can make it myself. My cousin is a big fan of Bermudian Rum cake. His daughter lives in Bermuda and brings home bought cakes to him when she comes so I would like to make one for him. Many thanks. Delia

Any type of instant pudding can be used, it's sold in powder form and you add milk and heat. There's an English brand called Angel's Delight if you can find that... (p.s. custard doesn't qualify!) :D
