What inspired this recipe? With the summer coming to an end, I was reflecting on all the fun gatherings we’ve had. One of my favorite drinks to serve is pink lemonade. This ice cream is the perfect thing to bring me back to those long summer days.

Pink Lemonade Ice Cream

1 cup heavy cream
1 1/2 cups whole milk
1/2 cup sugar
1 tablespoon honey
1 tablespoon almond extract
1 can pink lemonade concentrate
pinch of salt
3 drops red food color, if desired for a darker pink look

Combine all ingredients and chill covered in fridge at least 20 minutes. Process in ice cream maker per manufacturer’s directions. The mixture will not be completely hard. To finish, put mixture into a lidded container and allow to harden in the freezer at least 1 hour before serving.

Is making one's own ice cream cost effective?

What pretty photos! Any thoughts on if I could make this with lemonade from scratch? Would it curdle the ice cream? I would prefer not to use storebought concentrate but don't want to ruin the texture.

Thats a really interesting question Khurt. I feel like a good homemade ice cream is right up there with artisan ice cream shoppe quality, so depending on the ingredients you use - ie no edible gold leaf or beluga caviar - it can be very cost effective.

A scoop of ice cream at baskin robbins or ben and jerry's runs between 2.50 and $3 each, so for double that cost, I can make enough ice cream (eggless) for 6 people, and get a creamier more flavorful product.

Not only is this ice cream beautiful to look at but it tastes wonderfully refreshing!

The usual summertime drink is lemonade so why not lemonade ice cream?

With these hot and humid dog days of summer, it's the absolute perfect choice. Try it once and it will be a favorite for the years to come.
