What inspired this recipe? I love anything with mint but there aren't many ice cream flavors out there made with mint as the base.

Mint Raspberry with a Chocolate Swirl

1 cup whole milk
1 cup heavy cream
1 cup half & half
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon peppermint extract
green food coloring
2 cups fresh raspberries
6 ounces semi-sweet chocolate
1 tablespoon butter

Combine milk, heavy cream, half & half, sugar, and salt in a 3-quart pot. Heat over low heat until sugar dissolves. Remove from heat and add in vanilla, peppermint, and green food coloring (to reach desired color). Refrigerate until thoroughly chilled.

Pour mixture into an ice cream freezer and freeze according to manufacturer's instructions.
Meanwhile, melt chocolate and butter in the microwave until chocolate is completely melted. Stir to combine.

When ice cream reaches desired consistency add in raspberries. Then pour in melted chocolate and continue to freeze for 15 seconds. The chocolate will immediately harden creating big pieces of frozen chocolate swirled throughout the ice cream.
Spoon ice cream into a container and freeze for several hours.

My children's (aged 1.5 and 4.5) favourite ice cream here in France is mint with chocolate -- and raspberry would make it perfect. LOVE mint ice cream!

I just made this... unfortunately it is tastes kind of like when you brush your teeth and then drink oj afterward - disappointing!

Wow! Kind of harsh, kasiav! I thought the ice cream was powerful with it's minty flavor yet sweet with the bits of chocolate and the raspberries added a nice summery touch!

Kasiav, I'm curious to know whether you like mint ice cream but just didn't like the flavoring with the extract or you were not fond of the raspberries with the mint?

hiya - I do like mint choc chip ice cream, but I really did not enjoy the fruit mixed in. I love raspberries and was really intrigued by your flavor combination, and since I had all the ingredients on hand, thought it would be nice to try for a group dinner yesterday. Honestly as soon as it came out of the maker I tried it and scrapped it.

The mint extract with the fruit was the turn off - it really did have that toothpaste/fruit effect and was not appetizing to me. Sorry if my comment came off harsh - I WAS really disappointed! But, I did want to leave feedback and also identify what I disliked about the recipe after making it.

I guess it all depends on your preference... I love the mint & fruit blend, and think this is a tasty mix of flavors (especially with the chocolate swirled in). What a creative idea!

Kasiav, maybe it would be beneficial to use 1/2 tsp. of mint extract instead of 1 tsp. to give less of a minty flavor... It all depends on your preference, though!

My husband and I are definitely fans of this recipe! Thanks, Kate!

Wow !!! This is a fantastic recipe!! What a refreshing delicious combination of flavors. If you're looking for a change from plain vanilla or chocolate this is it. I served it to my girlfriends at a get together this week and we all loved it. Serving at a family get together this weekend. It is a recipe for young and old to love. Kasiav you should really try what LisaRS suggested maybe cut back on the mint extract thats what I did. Now is the perfect time to get fresh raspberries. I normally am not a fan of mint, but raspberries are my favorite and this tastes scrumptious together. Thanks for sharing this recipe Kate you have my vote !NTrotta
