Current Knife Crush: The Wüsthof Wave Knife

2009_07_22-WaveKnife01.jpgWe get a lot of questions about knives. What knife should I buy? Help me find an affordable chef's knife! Should I buy this knife set? Etcetera. We invariably recommend one good chef's knife and a paring knife or two. But we also have one specialty knife in our drawer: the bread knife. We don't use it for much else, though, and we wish it was more multi-use.

Well, this new Classic Wave Knife from Wüsthof may replace your bread knife, and do a lot more besides.

 
 

2009_07_22-WaveKnife.jpgWe have often heard that the wave style of bread knife — as opposed to the more common serrated blade — is more effective and more versatile. So we were really excited to see this knife, and frankly, we've developed quite a crush from afar.

This 7-inch knife is designed to cut bread as well as vegetables (it looks like it would be great for tomatoes) and meat. It has what they call a reversed-scalloped edge that slices but doesn't shred. Like the rest of Wüsthof's Classic line, this is a full-tang knife forged from a single piece of high-carbon, stain-resistant alloy.

We're big fans of Wüsthof and we think this is a promising addition to their lineup. This, plus a good chef's knife and a couple of paring knives would make a great selection of knives in any kitchen.

Wüsthof Classic Wave Knife, $99.95 at Amazon - This knife isn't cheap, but if it's truly this multi-tasking, then it should be worth it.

Be careful using a knife like this one - it looks and feels like a santoku, but the scalloped edge will not survive chopping. Be sure to use it like a slicer instead.

It's hard to sharpen wavy edged knives. That's why you never spend that much on them. I also don't understand the point of a bread knife that's only 7" long.

I can tell you our Wusthof rep at the store I work at was raving about this one. Says it's his new favorite knife.

re: sharpening them, Wusthof also has a sharpener they say will sharpen serrated knives. We tried it on one someone had been using to chop and it actually did resuscitate it somewhat.

I usually use my regular serrated knife to cut tomatoes and other soft veggies and have never had a problem.
