Reader Cupboard Challenge: Evaporated Milk and Oreo Cookie Crumbs

2008_04_07-Cupboard.jpgHere's another Cupboard Challenge in response to our invitation from last week. And really - this invitation always stands! Got some extra pantry staples to use up? A carton of milk about to go off? A bunch of leeks about to shuffle off their mortal coil? Tell us and let us help you come up with frugal and quick solutions for using your food wisely and well.

The latest challenge comes from Sarah. She has just two items: Oreo baking crumbs, and evaporated milk. This one is easy - read on!

Sarah, here are two classic dessert ingredients. We're not sure if you mean the pre-crumbled Oreo cookies that were sold for baking purposes (they've since been discontinued) or merely a package of crumbly Oreos. Either way, they should work just fine in this simple recipe:

Chocolate Crumble Balls - Basically you mix the Oreo crumbs with ice cream then make a fudge sauce with the evaporated milk and other pantry staples and pour it over top. Sweet tooth required!

Here are a couple more options:

Mary Jo's Oreo Ice Cream Bars
• Also, you can mix the Oreo crumbs with a little butter and sugar until the hold together, then press into a pie dish. Make the filling for Bev's Chocolate Pie and pour in. Bake.

Any more good ideas and recipes for Sarah?

I would use the evaporated milk in a chowder of some kind, potato leek, corn and potato or what have you.

And then make Oreo Truffles for dessert. Take a package of oreos and crush. Mix in 1 package of softened cream cheese. Form into small balls and dip in melted chocolate. Refrigerate till firm. These are a favorite at work. No one believes anything that tastes that good, could be that easy to make!

When I was little, we used to make "Cups of dirt" which is chocolate pudding with oreo crumbs on top and gummy worms sticking out.

I went to the Nestle Carnation website and they have recipes there: http://www.verybestbaking.com/carnation/family_favorites/recipes/

Do the advanced search and look for evaporated milk. The chocolate caramel brownies, iced pumpkin cookies, and rocky road squares look amazing!

I'm half-remembering this recipe, but -- I think the only other things you need are chocolate chips, chopped nuts, and a little melted butter. You crush enough Oreos to make about a cup full of crumbs (I think about 30% of a standard package is about right), add enough melted butter to hold the crumbs together, and press into the bottom of a 13x9 baking pan. Then you melt half the package of chocolate chips together with the evaporated milk, spread it on top of the crust, and sprinkle on the other half the chocolate chips and about a cup of chopped nuts. Then bake at 350 for about 15 minutes. Take out and cool and cut into bars.

1/2 cup of sugar
14 ounces of heavy cream
the can of evaporated milk
teaspoon of vanilla extract

Place in an ice cream maker per manufactuerer's instructions. When done, fold in some broken Oreo pieces. Place in freezer for an hour to harden.

Boom. Done.

Oreo. Truffles. K8, you are a genius. I'm going to get some Oreos on my way home and try this one out.
