Cupboard Challenge! Broth, Rice, Tomatoes...

2007_03_30-Cupboard.jpgIt's a spring cleaning weekend! We're tackling our cupboards and refrigerator, both in need of a brisk cleaning.

We got a jump on the cupboards last night and decided to clear a bunch of stuff out with an extra-large Cupboard Challenge. What would you do with: diced tomatoes, canned chicken broth, artichoke hearts, black olives, and short-grain rice? Sound off here! We'll bring you a recipe next week.

Fits into a "spanish stew" recipe that I made last weekend: Brown some pork chunks. Add onions and green peppers to pot to saute. Add can of diced tomatoes and chicken broth. Simmer until pork is tender. Add artichoke hearts and olives; simmering for another 5 minutes or so. Serve over rice.

Paella: saute onion, pepper, garlic in olive oil, then add rinsed rice, fry some more. Add broth (you may dissolve some saffron in a bit of broth and add if desired). Cook some, stir. Add the other stuff (plus fish &/or meat of choice--sliced chorizo, sliced chicken breast etc if you wish). Cover & continue cooking some more-until done. Drizzle with olive oil just before serving.

I instantly see rissotto. Short grain should do fine for a cupboard clean-out meal. I'd saute some aromatics along with the artichokes and rice in olive oil until the rice becomes opaque, then add a ladle full of warmed broth and stir until almost absorbed, repeating until the rice is cooked through (I'd salt after the first ladle). If you have some saffron that'd give it a nice glow as well.

I'm excluding the diced tomatoes altogether, maybe for the next challenge :)
