Kitchen Tool: Emulsifying Whisk

2008_03_11-Whisk.jpgWe are whisk junkies. Whisks are so helpful in the kitchen, and we use our growing collection for mixing and beating in nearly every recipe we make. So we are naturally curious about this whisk we just discovered.

 
 

We have several sizes of balloon whisks and a favorite saucepan whisk already, but we seem to reach for whisks as much or more than our other kitchen tools. Other than our wooden spoons they are our favorite tools!

This whisk is supposedly designed for better emulsifying. Emulsification is what happens when you whisk oil into vinegar until they form a smooth combined liquid. What happens is the oil becomes broken into tiny drops that are suspended in the thinner liquid, and well distributed enough that the two liquids look combined.

This emulsifying whisk is made for emulsifying gravies, vinaigrettes, and sauces like Hollandaise sauce. Six coil-wrapped branches supposedly transform oil into tiny droplets. It is advertised as great for whipping vinaigrettes, egg whites, heavy creams and mayonnaise. Dishwasher safe stainless steel.

We have so many whisks too. Sometimes I'm not sure we need them all, but then I find a reason to use them. I don't use my emulsifying whisk very often (when making vinaigrettes I usually use a jar and shake it, or the food processor,) but maybe I'll start to use it now.

i don't have whisk lust, i just have one crappy one that i hardly ever use...but for vinaigrettes i use a little honey or mustard to speed the emulsifying process, and just a fork to whisk. by the time i smell that balsamic vinegar, i'm salivating so much i can't wait to get a whisk or a shaker. ;)

That's whisk is so hardcore I may have to buy it. I have one of those little magic spoons that is essentially one little hump from that whisk.

Then again, my little magic spoon does a good job, so maybe I just should stick to my guns about not buying more stuff.

that bowl is way to small for that whisk. that would splash all over the kitchen. i wonder if it really is any better then a fast wrist? i have a tiny whisk that i use for all little amounts but i must admit if i have to do a large batch i use the food processer,it is just easier.
