I used to teach at the Viking schools. The recipes are just OK, with an emphasis on not being too challenging for the home cook. You do get to use the Viking equipment but in a heavily limited way. Looking at the above titles, I'd say there's a minimum of hands-on cooking in those classes. And if your team gets assigned the salad or something, then not at all! But they are fun and a good way to meet people and, depending on your instructor, informative. It's a good thing to do with, say, your mom.

That said, I adore a couple of the recipes I came across in my time there. There's a potato and sausage side dish that is yummmmm and I still make lemon curd the way they do.

oh! yeah -- here's another thing -- the classes above. the $49 ones, are going to be DEMONSTRATION classes. You don't get to cook at ALL, you watch the chef and assistants and you are served each plate as you sit. No hands-on at all except for the occasional volunteer-from-the-audience deal. The hands-on classes were you DO cook start about $79.

So if you're burning to take the appliances for a ride, make sure you get a hands-on class.
