oooooooooooooooh! that dutch cooking thing looks GOOD. Peter Rose, who is leading the discussion is actually a woman and wrote a FABULOUS cookbook called "Foods Of The Hudson" that cooks through the seasons based on what should traditionally be available. She's dutch, and as far as i can tell from the book has an encyclopedic knowledge of farmers and purveyors in and around NYC. This sounds like a must do!
