Recipe: D.I.Y. Honey Roasted Peanuts

We weren't going to let one failed attempt get us down - we still think that homemade honey roasted peanuts would make a terrific homemade holiday gift. Here's the recipe we wound up with, and it's even easier than we hoped. This gives the peanuts a sweet glaze of honey with some crunchy sugar bits that dissolve on the tongue. This is a basic recipe, and we'd like to experiment with adding some extra spices and flavors. Enjoy!

 
 

How to make Honey Roasted Peanuts...

D.I.Y. Honey Roasted Peanuts
16 ounces roasted unsalted peanuts
1/3 cup honey
1/2 cup sugar
2 teaspoons chunky kosher salt

Heat the oven to 350°F and spray a cookie sheet with baking spray.

Melt the honey over medium heat or in the microwave until quite liquid. Pour over peanuts. Stir in the sugar and salt and spread out on the baking sheet.

Bake for about 25 minutes, stirring frequently. Make sure you stir in the peanuts on the edges so they don't burn. When slightly brown, remove from oven. Let cool completely then break up any big chunks and store in an airtight container.

16 ounces = 500g

Btw, what exactly is chunky kosher salt? The translation doesn't make any sense to me :(

Fabio,
I think "coarse kosher salt" might be the proper term.
