...Water, salt-free tortilla chips, leftover beet and cabbage coleslaw (even better two days on), and Indian lentils from Trader Joe's. Those lentils were cheap, easy, fast, and good. We scooped them up with the tortilla chips - very yummy.

I bring my lunch to work every day, it helps a lot with keeping my food budget reasonable living in NYC. Today it was some leftover spinach pie. The phyllo gets a bit soggy in the microwave, but it still tastes great! The rest of the week it will be quinoa with the braised celery that was suggested in an earlier post...need to get rid of the celery lurking in my vegetable drawer.

Funny you should ask... I'm actually eating this squash-couscous salad from your site! I made it this weekend to eat for lunch this week. I used pearl couscous; next time I think I'd use scallions or finely diced red onion instead of cooked white onion as was in the recipe. Very yummy!

I grabbed some at the farmer's market Saturday (thinking, 'hey! it's green & leafy! it must be good!) ... I'll find out!

I work in an office building on the outskirts of town on a state park. There aren't many places that we can go to lunch quickly, so I nearly always bring left-overs. I have salmon and green beans today. Life is good!

I brown bag it every day--always leftovers. Today, it's leftover pizza from a little pizza party I threw on Sunday--one slice of fig, basil, and provolone, and one slice with sausage, olive, and mushroom.

pearled barley soup with root vegetables from How To Cook Everything Vegetarian. I was a little over-zealous with the sage and now the soup is overpowered with it. A good friend sent some Mother's Iced Oatmeal cookies into work with her husband today, so I may default to those after the soup.

today, leftover pesto pasta with potatoes and greenbeans, an apple from apple picking on sunday, a chopped carrot aaaand a dried fruit bar from trader joe's. possibly a funsize snickers from the office candy bowl later :)
i also pretty much always brown bag it because midtown nyc is so expensive for food. 9 times out of 10 it's a turkey sandwich on whole weat with a slice of provolone and peach chutney, along with some tj's pretzel slims and and apple. plus maybe some grapes or baby carrots. but the pesto my aunt made for dinner sunday and was so delicious i had to take some home!

leftovers whenever i have them! today i'm enjoying the remains of last night's Oktoberfest-inspired dinner--sausage with sauteed apples and onions cooked in a combo of beer and apple cider and mashed delicata squash with melted ementhal (inspired by a Kitchn recipe). yay for cleaning out the fridge.

I buy lunch every day because I have really good options right near work. Today was a tempeh/avocado sandwich on fresh-baked multigrain bread with miso & pesto & baby greens & bruschetta mix. It's all vegan & it's a good hearty meal to keep me full almost all day.

I made that beet slaw a couple days ago, and had it for lunch yesterday, along with a small hummus and oven-dried tomato sandwich. Yum! Today I had the same hummus and tomato sandwich, with an apple for dessert.
As a student cooking for myself (in London--not cheap!), I've become very, very good as saving and using up leftovers. If I know I won't be able to finish something within a couple days, I'll freeze it in individual portions for future nights when I don't have time or am too lazy to cook...just like tonight, when I came home late and hungry. Defrosting some homemade cauliflower and chickpea curry, along with some frozen naan, was the perfect dinner!

I love reading everyone's posts. As for me, leftover ratatouille from last nights dinner and a pear. But I think I want theguaz' lunch. Most days its leftovers from the night before or earlier in the week. Yesterday was a butternut squash bisque that I had made Sunday night.

here's a recipe for the indian lentils. If you buy a packet of the cooked(but unspiced ) french lentils from Trader Joes, it really cuts down on the cooking time. And it's a really forgiving recipe, so go ahead and modify it:

Today I organized an office Pumpkin Carving contest. We enjoyed catered Lasagna with a nice green salad and fresh buns. It was awesome. We carved 6 pumpkins and gave away prizes for the 'best' pumpkins. We laughed the whole time. What a great way to spend the lunch hour.
