What Did You Eat for Lunch Today? Pesto Chicken Sausage and Garden Tomatoes

...they were still warm from the sun, a little dusty, and incredibly sweet and tasty. We think that tomato plants should be handed out by the thousand; everyone would just be happier if they could eat tomatoes from their own container garden.

We paired up the tomatoes with a basil pesto smoked chicken and turkey sausage from Trader Joe's. We pan-seared it a little to get it crispy on both sides. Smoked sausage is a great lunch option; you can eat it cold or heat it up quickly.

I just scarfed some curried chicken pasta salad w/ grapes, cantaloupe, and celery. a delight! all that chopping was worth it.

Went the easy route for lunch today: oven roasted chicken sub from Subway. Got the $5 footlong and plan to eat the other half for supper :-s

But breakfast this morning was a whole different story. I had two eggs over-medium on two slices of nutty whole-grain toast with mustard and a slice of cheese. Delicious!

I had friends in town from Tokyo today, so I was spoiled and brought us all to 21 club. Asparagus ravioli and grilled shrimp and gnocchi.

i made a salad with red leaf lettuce, grape tomatoes, green olives, avocado, feta, shallots, red pepper, and smoked turkey in a dijon vinaigrette. if only i had a glass of red wine to go with it!

I'm having some leftover scalloped veggie casserole type thing I made (potatoes, turnips, zucchini, onions, garlic, chard, cherry tomatoes, and a little bit of milk/butter/cheddar cheese) from my CSA box. And a roll.

Leftover broad bean salad (http://www.riverford.co.uk/recipes/recipe.php?recipeid=83&catid=6) made with tomatoes, garlic, feta and some late fava beans from the weekend's market. Super yum.

Salvaged leftovers--had a leftover chicken breast from a whole chicken cooked in Guinness, which was okay, but it was better mixed with some sliced cabbage, turned into a chicken salad.

Last night we just started throwing some remaining ingredients together and bam.. we had an amazing meal that I'm delighted to have leftovers of for lunch today:

Chicken breast stuffed with brie, fresh herbs from the garden, spinach and garlic, wrapped in turkey bacon topped with breadcrumbs baked in a marinara served over whole wheat rigatoni.

I love these posts - I get such great ideas from them. Could we have one every day? Not always lunch, but maybe breakfast and dinner too?

PS-today for lunch I had leftover steak sliced thin steak over salad leaves with some quinoa mixed in. Plus a small piece of butterscotch fudge.
