Brown Bag Thursday: What's for Lunch Today?

Here's our lunchbox today: leftover brown rice and sliced roasted pork loin with sauteed bok choy and mushrooms.

It's Thursday - what are you eating for lunch today? Did you bring something to the office, or are you at home with a proper hot lunch? Or are you out with coworkers somewhere nice? Do tell.

So halirious-- I have the same container that I use for lunch sometimes! Today it's bowtie pasta with home-grown basil pesto and grilled sliced zuchini from the farmer's market.

Lean Cuisine ginger garlic stir fry with chicken and "twice the veggies." Dried cranberries and Welch's gummy fruit. I'm a total brown-bagger. Hardly ever go out for lunch.

Today it's salad, two types of slightly bitter lettuce (from yesterday's CSA basket), and grilled chicken with mandarin oranges.

Leftover chili skillet potatoes, beet/celery/almond "salad" with lime and salt, and wholegrain "tea sammiches" with goat cheese and cucumber.

It's "clear out the fridge, I'm going on vacation!" day.

Chili-garlic shrimp with saffron orzo. Ate out last night but had to use or lose the shrimp, and the whole thing took about 15 minutes before bed.

Unfortunately, still 2 hours away from lunchtime...

As a single person living solo...I love using up leftovers and unfinished foods for lunch. Today...coleslaw mix (w/o dressing), with a can of tuna, cut up red pepper, olive oil, a little champagne vinegar, s&p, and a few dabs of dijon mustard. Also brought a hard boiled egg and a yogurt. Yesterday though, I loaded up on Lean Cuisines on sale (for next week)... I keep low fat snacks at the office, tiny boxes of raisins, lipton cup a soups, 100 calorie packs of this n that. I must be a grazer.

I had a cheeseburger with mushrooms, onions and jalapenos (but no bun) from the new Five Guys that opened near my work. I exercised before stopping to get it ;-).

had leftover spicy thai noodles, which has noodles, chicken, egg, green onions and bean sprouts. also had a strawberry yogurt with granola. and a tall glass of ice water.... it's kind of warm today :)

Wasn't able to brown bag it today, so I went to Lenny's and discovered this fantastic cold tofu salad - some sort of very sweet brown sauce with scallions and red peppers. Sweet and heavy, but delicious, and big hunks of tofu.
