Brown Bag Meals: What Did You Pack For Lunch?

2007_09_12-Lunch.jpg Did you take our challenge from yesterday and pack your lunch today? What did you pack?

We couldn't take a picture of our lunch today, so this is a cheaterly photo of a lunch from last week - leftover Late Summer Bean and Vegetable Salad and an incredible tree-ripened white nectarine. Salads and beans are great for lunches because leftovers tend to taste even better than they did the day before, and they often don't need refrigeration.

Leftover tonkatsu from a local Japanese/Korean place where I ate last night and discovered the hard way that an entree can easily feed 3 people. :)

Leftover sauteed patty pan squash and pasta with pesto. I also brought leftover pork with shallots and balsamic glaze yesterday, which was much heartier and more meal-like than I normally have for lunch, and it was fabulous.

Having no leftovers at the moment, I went old school and packed a pb&j on oatmeal bread, a banana and a bunch of grapes, and some crackers to snack on later.

crusty bread sandwich with eggplant sauteed with scallions and garlic, deglazed with balsamic vinegar, from a Batali book

except I didn't really like how the eggplant turned out
sheesh

it'd be better with cheese or turkey or something . . .

I've been on a mission to eat better and packing lunches (rather than visit the fried food cafeteria downstairs) is a big part of that. Today I had a turkey, cheese and tomato sandwhich on fresh bread. I have apple slices and vanilla yogurt for a snack later.

Sauteed tempeh and string beans, a small tupperware of cottage cheese with walnuts and cinnamon, and an apple & peanut butter for a snack. I always bring lunch, to save money, but it means I eat healthier, too.

I packed his lunch this morning but he forgot it. So I ate it instead.

Pasta with fried chickpeas, broccoli, mushrooms, garlic, wine and some shaved Parmigiano-Reggiano. We ate it with grilled chicken last night.

leftover apple, fennel and celery salad, with a few slices of salami and cheese as a supplement. I like to pack lots of snacks for the day (I'm in grad school and often on campus from 9-7 and am trying to save $$!)--grapes, almonds, raw bell pepper strips, etc.

One big, ripe, sliced beefsteak tomato from the weekend farmer's market, and a small container of cottage cheese. Salt and pepper on that.

Leftover dijon mustard/rosemary pork roast slices, cold, and a hunk of ciabatta. Sugar-free Redbull, since it's gonna be a long afternoon.

I work from home, which makes the lunch thing a lot easier! Made egg on toast, with cherry tomatoes from the garden.

I had a concoction of white beans with garlic, onion, herbs from the garden, and I stopped at the farmers market on the way to work and tossed in some fresh tomatoes when I nuked it. To accompany it, there's a place that sells day-old very good bread, so I bought some of that. I'll make some grilled cheese with the bread tonight, and maybe bread pudding if it starts to go stale tomorrow.

Leftover sub-par pad thai next to a simple salad of pea shoot and romaine with a sesame-soy dressing. Hard boiled egg. Lots of water. Banana.

Enchiladas verdes - a homemade experiment with farmer's market tomatillos that turned out delish. Tart, spicy, and cheesy. Then a perfectly ripe (love it when that happens) peach for dessert. My coworkers ate up all the chocolate chip cookies I brought in, so my afternoon chocolate craving will go unfed today.

my favorite lunch, restaurants leftovers!

beef with gremolata from dinner at mozza osteria, even better after a night in the fridge;
pumpkin puree, my favorite sub for mashed potatoes;
baby broccoli;
figs, of course, while they're in season;
iced venti decaf americano;
peanut m&ms from the office accountant's stash;
and, a violet cassis macaroon from paulette, the new stunningly beautiful, addictively tasty, macaroon only bakery down the block.

Well, I was with a client, so I ate part of what I made for the kids, nothing too crazy. We made up silly names for veggies to help them eat them, so today we had carrots (lizard legs), bear noses (black olives), and jelly fish (cucumbers). For dinner I had left over Peruvian Chicken. Totally yummy.

half a cup of white rice, leftover mahi-mahi with roasted red peppers, onions and garlic in white wine reduction, steam veggies. bottle of water, 1/2 kiwi, 3 gingerbread cookies and 2 chocolote hersheys cookie. ( i know too much cookies)

curried chicken salad (mayo, whole grain mustard, hot curry, celery, relish and of course, chicken) on pita with a big-ass'd salad (lettuce, tomatoes, persian cukes, and garlic/lime dressing)

I packed a peach and a yummy rye bagel for breakfast (im a 10am breakfast eater), a quesadilla and some herb salad leftover from dinner, and some applesauce and some carrots.
