Doing More With Less: The Bagel and Lox Edition

We've tackled the problem of rising food costs in the past and you've come up with great suggestions like these for how to keep your own kitchen up to restaurant standards without paying restaurant prices. We find this problem particularly vexing when cooking for two on a Sunday balloons into a full out brunch for every friend who'd had a late Saturday night.

One of the easiest ways we've found to cut the cost of food is not to change ingredients, but to change preparation. Here's our version of bagel and lox when you're feeding the neighborhood...

For a traditional bagel with lox you would use about 2 ounces of smoked salmon which at Whole Foods will run you between $2.50 and $5.00. However, if you chop the lox up and mix them in with the cream cheese, you can use just 4 ounces of lox for enough creme cheese to heavily douse 5-6 bagels.

More With Less: Bagel and Lox
Serves 6

4 ounces lox
8 ounces cream cheese at room temperature
handful of chopped dill
6 bagels, sliced and toasted

Using a very sharp knife slice lox into squares the size of about half your smallest fingernail. Add chopped lox and chopped dill to cream cheese using a large fork. Do not use a mixer, this will smash the lox.

Spread on bagels.
