Yes, the machine is loud. I like to call it, dramatic.
I recommend marinating the onions overnight in the fridge.
I usually keep them for as long as it takes to finish them all. Usually a couple of weeks.
You can also use them for cooking. I roasted a chicken and added a few onions to the pan at the end just to warm them up and deglazed the pan with some of the pickling juice and swirled in some extra virgin olive oil fresh herbs to make a quick sauce.
