hmm...the only one of those I'd consider making is the tacos de papa and they were actually already on my "to make" list.

I'm bookmarking this post for later reference, but I must point out that bullet #5 is NOT vegetarian or vegan. Guinness beer is made using isinglass (fish bladder), so us diehards might want to avoid that one.

If you click on the Guinness recipe there are suggested vegan beers to use in place of Guinness. And I'm wondering how I missed that recipe since I've been obsessed with stews lately.

I looked at the recipe more closely after leaving my comment and then I saw the disclaimer. D'oh! I'll definitely give it a try with another beer.

Comments snipped for off-topic trolling. When (if!) we start a thread debating whether or not vegetarianism is OK in a broad moral sense, we'll let you know.

Wow. Are vegetarians a race or a religion now? We had two comments erased here already, all we did was ask a polite question about etiquette at vegetarian dinners.

patrick, all I asked was whether it was acceptable to bring a bag of bacon bits to a vegetarian dinner - similar to the discussion about a vegetarian bringing his own food to a turkey dinner. There was nothing rude in that question, yet it was erased twice - unless "bacon" has been decreed to be an obscenity, unbeknownst to me.

patrick, orthorexia nervosa is a recognized eating disorder, there are plenty of medical webistes about it. This is especially telling:

"Once you've reached a certain point, the rigidity demanded by orthorexia makes it truly difficult for you to eat anywhere but home. Most restaurants don't serve the right foods, and even when they do, you won't trust that it's been prepared correctly. Even your friends inexplicably fail to cater to your personal preferences.

A common strategy is to bring your own food in separate containers and chew it slowly, looking virtuous and soulful while everyone else gulps down garbage. Or, like a solitary alcoholic, you can decline the invitation and dine in the loneliness and comfort of your own home."

Ladymantle, for all the websites you may have encountered, you are either blinkered by your compulsion to label others, or have not thoroughly understood the content of these sites. Yes, one of the symptoms of orthorexia nervosa ( a term coined by a former sufferer and yet to be recognised as an actual disorder by the medical profession) can be omitting meat from the diet, but it is not also a cause. Whatever causes this illness, it is highly unlikely to be motivated by food itself and, just like recognised eating disorders such as anorexia nervosa and bulimia, the sufferer is using food as a means of having some sense of control in an attempt to overcome, or compensate for, the real causes of their illness.

Many people choose to eat and live healthfully and are supported and encouraged by the medical profession to do so. If vegetarianism, veganism or even healthy eating were an illness, do you think that this website would be publishing recipes to cater for these choices?

Your repeated abuse of this term and its symptoms serves only to blatantly highlight your own prejudices, which is bad enough, but more distressing still is your apparent and mocking disdain for actual sufferers of this illness. Heaven help anyone with an eating disorder, should they turn to you for support and understanding.

As for these recipes, I look forward to trying out a few when I get home. (Are there any low-carb' ones in there, I wonder?)

AcrossThe Pond, if a person suffering from any mental disorder turns to me for support and understanding, I will do the right thing - help them find professional help. I would definitely not encourage them to force their whims and quirks on them lifestyle of healthy people. It's called "tough love" and it works.

I actually have a food-related question.....at last!!!
I spotted the watercress and cabbage stir-fry recipe but I've not yet tried cooking watercress. However, I grow we call "American Land Cress". It's quite strong stuff actually(!) so, I would like to know, if I use it instead of watercress, should I use the same quantity, or less? I'm rather hoping that, as its name suggests, somebody somewhere stateside grows it too and can answer my question....

I have been on Fit for Life diet so to speak, lost 30 pounds since Oct.
I bring this up because there are so many great recipes in that little paperback. Full or hearty soups and stew, shepherd's pie most everything is vegetable based since I am a vegetarian this program works for me. Even if one is not dieting this is a great source for recipes and thought I would mention it and since mollyjade mentioned on a stew kick.

There is a curried chicken salad recipe that I follow just use tofu instead that amazing.

Thanks for posting a great roundup of Vegan/Vegetarian meals - it makes me really happy that this is increasingly in the American consciousness. And the icon of the udon has made me crave it several times in the last couple days when I look on AT and see it in the bottom of the screen... yum! I am especially looking forward to making the tamales from this list!

ladymantle - First of all, I find your negativity really off-base. If you don't want to make vegan/vegetarian recipes, don't. But please don't insult others who do. People choose vegan and vegetarian diets for many reasons: the three big ones are environmental, ethical, and health-related. They are all very valid reasons. Plenty of people also choose to cut down on meat and dairy, or just eat yummy meals that happen not to include meat/dairy. But whether or not you want to become a vegetarian, you don't need to insult those who are.

And, by the way, it is really NOT hard to be a vegetarian or vegan. In LA, where I live (and throughout California), there is a lot of acceptance of vegan/vegetarian diets, including many vegan and vegetarian restaurants. There are 4 within walking distance of my apartment. And I go to "regular" restaurants frequently, too. Yes, I ask what is in my food. But honestly, more people should do that - it is good to be aware what goes into your body.

Which one do you think is highest in protein???
I need to find a go-to recipe that's a power punch for when I get the protein blues.

AT, please write a list/article of recipes with the highest amount of protein without the aid of meat/seafood? I know it means I'm asking you to do my homework for me, but please, pretty please..

Considering how much cow poop is in ground beef and other kinds of messy mix-in-match "meats", I'm really surprised some people, examples in previous comments, apparently hate the lifestyle of someone who rejects slaughterhouse meats.

Thanks for this post! I am vegetarian and am in a cooking slump. I am excited to try out some of the recipes.

I cannot wait to make the veggie burger w/ beets. We joined a CSA this year and while we love the challenge of cooking with "new" veggies, I'm having a hard time coming up with new and interesting ways to use beets.

We've eaten so. many. beets.

huh. came over here because of searching for vegetarian/vegan inspiration for an upcoming function.
I will stay out of the general fray.
(and I have already mentioned my reading crush on patrick the other one somewhere else on AT)
and should make it clear that I am a carnivore.
but-
kinda beginning with meatless Mondays, and for health and economy and cooking fun, we are eating a lot less meat these days.
anyway, I want to persue that Northstar burger!
I developed Swedish meatballs for a friend with both gluten and dairy sensitivities that worked really well, meaning regular people who don't give a s* liked them, and there were no leftovers. none. (with a lingonberry reduction sauce)
I used rice as the binder and was very stressed about it - but they came out fine. Usually I use oats.
Right now, I am thinking about beets a lot!
So this roundup was right up my alley.
Have to leave this hanging here, my function is in August, & I have tests & samples to make to accomadate the diverse guests.
and I'm on my daughter's computer with no spellcheck.
