We've finally reached dessert in a series of posts about making my wedding a couple of weeks ago. I've already written about the main dishes and the accessorizing of the fish. Even though I knew it would be a lot, I felt comfortable planning for and preparing the savory end of things. Baking, however, is more of a wild card for me. As a person who doesn't even own measuring spoons, specificities do not interest me. That approach can be a bonus in the kitchen, yielding great innovations...except when it comes to making a cake...
I cooked all the food for my own wedding (50 attendees) a couple of weeks ago. Well, I didn't cook everything. I bought 25 pounds of smoked fish from Acme Smoked Fish in Greenpoint, Brooklyn. They smoke all the fish there and I trust them to do it just right.
I overestimated a little in terms of people's capacity to eat smoked fish, however. I bought a 1/2 pound per person but I would do 1/3 pound per person next time...
I got married a week ago. Instead of the usual fears -commitment, weather, stepkids' sabotage - I spent the weeks leading up to the event wondering if I was capable of cooking a meal for 50 hungry people. Just days before the Sunday afternoon wedding, friends were still trying to dissuade me from going through with it....

While I know that many of you are waiting til tomorrow to submit your great small spaces, there are likely many others who haven't had the time to get it together.
