Tomato, mozzarella, basil, and onion on ciabatta is a classic for a reason. So delicious. From my childhood, I still love apple jelly and cheddar on white bread. When grilled, the apple and cheddar just meld. Great way to get an apple pie fix. Not healthy, but so good.

seedy grainy sliced wheat bread buttered and dragged in grated parmesan on the outside swiss, jack, thin tomato and spinach leaves inside. the parmesan gets brown and crispy and the sharp/cool cheese combo inside with the soft thin tomato and wilted spinach. oh ya.

It's a toss up between grilled cheddar and apples or nutella with bananas!

Like virtually everyone else, it seems, my heart belongs to grilled cheese.

I can't help it; grilled cheese has been where it's at since I was a kid. (When my mother, a flight attendant, worked nights, my dad would "treat us" with grilled cheese and soup. Of course, the cheese was Kraft singles and the soup was Campbell's, but still. He built houses for a living; that sandwich was a tour de force for him!)

My own favorite variation involves crusty bread--either sourdough or dark, dark wheat bread--a slab of tomato, a tiiiny touch of mayonnaise (the only time I ever use mayo !), and uber-sharp cheddar cheese or, even better, tangy Red Leicester. Mmmm.

Damn. Now I'm all hungry.

I found a cheese at Trader Joe's called 'Blue Castello' - seemingly a combination of a mild blue cheese with brie. Take a (thick) shmear of this on crusty farm bread with a little good quality olive oil drizzled on the outside and heat in a panini press.

Thick slabs of sourdough boule from our local bakery brushed with olive oil, cheese (whatever we have - mozzarella, cheddar, brie, really any of it is good!) and pesto. Maybe some spinach if we have it around but it really doesn't need it.

Ohhhhhh, I need one of these soooo bad! I make a Ruben almost 4-5 days a week. I toast the bread in a toaster, and pile up the ingredients. Then I nuke it for another minute. I couldn't even imagine how good it would taste if cooked properly!

My favorite hot sandwich is the Turkey Asiago sandwich at Panera (I think that's what it's called). I also really enjoy a grilled cheese made by my mom (no one makes it better than mom).

Cheddar, roasted red peppers, shredded basil, mmmm. I use this electric grill thing to make "fake panini". It is sooo lame, but it's the best I can do--so I do it!

My favorite is simple: juicy heirloom tomatoes, leaves of fresh basil, and fresh mozzarella di bufala on ciabatta.

And I really need this panini press, because right now I make panini in my mini George Foreman grill, and, come on, that is just pathetic.

I already have a panini maker, but I just wanted to say that cookbook you have pictured is AWESOME! I've had it for years. That chocolate sandwhich on the cover is to die for, as long as you use good quality bread. It's a grown-up sandwich, but if you spread one of the slices of bread with marshmellow cream, it still rocks in a young hearted way. My son loved it as much as I did.

tip: use queso oaxaca when you need mozzarella. It' s better than most mozzarella available in the states and tastes more like real Italian mozz. It also melts better. And costs less.

TUNA MELTS! I never really had them growing up, but in the past year or so, we've been experimenting with all those greasy spoon foods you know about but don't bother pursuing. Coming in at a heart-wrenching second is an apple and brie sandwich, which I am absolutely craving right now but there is no brie in the house. And it's not really a panini press sandwich anyway. Take a french baguette or ciabatta bread: add aioli (mayo with diced garlic in it) on both sides, lay a bed of thinly slides onions followed by basil leaves, then add slices of tomatoes, sprinkle salt and pepper then top with mozzarella cheese and more garlic. Grill till cheese is melted!

Mmmmm.....Thinly sliced Italian beef layered with thinly sliced Provolone cheese and thinly sliced red and green peppers, all drizzled with just a little garlic infused olive oil.

Can you tell I like my sandwich stuff THINLY sliced? LOL! I think it just makes a better, tastier sandwich.

I haven't been cooking long enough to perfect anything, but any sandwich with tomato is perfect for me!

My favorite panini is grilled chicken, fresh mozzarella, baby spinach and ripe tomatoes with a sun-dried tomato mayo that I make. Yum! I'd love to win this!

My favorite is a tuna, pickles and cheese sandwich. I got everyone eating them. Butter the inside of the bread and Just mix up the tuna with mayo. Butter the inside of the bread and spread the tuna. Add the pickles and cheese. Butter the outside of the bread and grill. YUM!

Being gluten-intolerant, I layer very sharp cheddar and a slice of sweet onion between plain old rice cakes, and grill it. It's very good.

I love making pressed sandwich/calzones.
I like to use a doughy bread, like a fresh kaiser bun.
Cut in half, spread lightly with tomato sauce, add mozzerella and freshly grated parmesan cheese, pepperoni (or any other deli meats), and thinly sliced green peppers.
Press, and eat! SO Delicious!
(I WISH I had a Panini Maker, but I use my old waffle maker.)

can't beat grilled cheese.

Two pieces of whole grain bread, brushed lightly with olive oil, three pieces of pastrami deli meat, two pieces of munster cheese, grilled roasted peppers, onions,sprinkle of Italian seasonings, garlic powder and spicy mustard. Grilled in a pan served with cole slaw and a couple of peperoncinis.

Our favorite is Italian Roast Beef, Munster Cheese, a light dressing of mayo and grey poupon, grilled on fresh oatmeal bread. Served with a side salad of sliced avocado and cucumber sprinkled with extra virgin olive oil. We tend to go no salt...but for those who can't resist, avocado always tastes extra yummy with a sprinkling of lite salt.
