Oh, the humble carrot. The kitchen workhorse in your stews, soups, sauces, and broths. Always the bridesmaid, never a bride. That is, until fancy carrot salads became a thing (here's looking at you ABC Kitchen in New York). This simple, beautiful carrot ribbon salad definitely highlights just how beautiful this vegetable can be.
You don't need any fancy equipment to get your carrots into ribbons, a vegetable peeler or mandolin will do. The trick to getting the ribbons a little tender and curly is by putting them in water (as the recipe shows). Toss with some simple nuts and cheese et voila!
