We've talked about breakfasts inspired by dinner food in the past, like breakfast pizza, but I admit the idea of breakfast nachos never occurred to me. Now, however, that I've seen Joy the Baker's beautiful and delicious breakfast nachos, the idea is completely consuming my post-holiday Thursday.
You probably associate nachos with dinner, snack, party or bar food, but there's no reason they can't start your morning off right, too! You'll find much of the usual taco or burrito fare works wonderfully well when topped with a couple of eggs. Try some on your own or whip some up for your next brunch get-together for a small group.

breakfast nachos? they're called chilaquiles.
I discovered the wonderful, wonderful world of breakfast tacos on my first (and subsequent) trip(s) to Austin and the nachos sound pretty similar. But I agree that Joy's post made me drool on my work keyboard yesterday!
I was also thinking chilaquiles.
Those are chilaquiles, and they rule.
Anyone that's going to try this needs to fry up their own corn chips using real corn tortillas. After you do this once or twice and get the timing and process down, you will balk at eating store-bought chips again. No comparison.
Or live in San Francisco, where all decent taquerias make their own chips and give you bags of them with each burrito. I save them for Sunday morning chilaquiles.... or Wednesday night chilaquiles.
But actually, I find that I prefer making them with slightly stale corn tortillas -- without deep-frying them. I just crisp them in a hot skillet with a tiny bit of oil (~1tsp).
