Take One Pot by Georgina Fuggle

New Cookbook

Consider the humble cooking pot — that's what Georgina Fuggle is asking us to do in this vibrant and mouthwatering cookbook. With just one pot, you can simmer soups and braises, steam a batch of mussels, make a creamy risotto, bake a savory pudding, and...well, just about anything. Put away your other pots and pans; one pot is all you need for the recipes in this book!

Quick Facts

Who wrote it: Georgina Fuggle

Who published it: Kyle Books

The angle: One pot to rule them all

Number of recipes: About 90

Recipes for right now: Borlotti Bean, Tomato & Sage Soup; Polenta Bake with Tomato, Feta & Mushrooms; Sweet Potato & Coconut Dal; Drunken Mussels with Hard Cider, Leeks & Chorizo; Chicken & Sausage Cassoulet; Braised Duck Legs with Juniper & Ginger; Molasses Baked Beans; Boned Lamb Shoulder with Walnut & Mint Pesto

Other highlights:

For the most part, the recipes stay pretty close to European and American roots with lots of rich meat-centric stews and braises made with root vegetables and beans, but Fuggle does include the occasional culinary foray into things like Indian curries and Moroccan tagines. All in all, this is hearty, stick-to-your-ribs fare — perfect for these last few dreary weeks of winter.

I also realized partway through that I misunderstood Fuggle's goal slightly. While these are all one-pot dishes, they don't all use the same pot. Dutch ovens take center stage, but Fuggle also puts smaller casserole dishes, roasting pans, and even simple squares of foil to good use in this book. The entire recipe from start to finish is always cooked right in that one baking vessel — nifty!

Who would enjoy this book? Cooks making do with just a few pots (or just one!) in their kitchen, anyone stuck inside during a snowstorm
