Food themed TED talks are always inspiring, but a TED talk by Dan Barber is a special treat. Mr. Barber tells a terrific tale, in this case a love story about a farm, two fish, and the future of humanity. Definitely worth watching on your next coffee break! He's such a great speaker.
The subject matter is an interesting one.
The fish farming method he talks about sounds sustainable and innovative. It would be nice if all of our "meat" farms were that way too.
It's interesting though, that a restaurant like Barber's would have to rely on serving fish that comes from Europe. On the one hand his restaurants are models of sustainability because he is raising and processing the meat and produce that he is using at his establishments but on the other hand he is talking about serving fish that has to be flown in.
I'm not criticizing by any means. I'm just pointing out that no matter how idealistic we try to be, at the end of the day if that idealism is part of a business structure, sometimes, business will win at the end of the day. After all, without the business, you don't have a vehicle to drive your idealism.
The dilemma? Giving people want they want... a steady supply of fresh, white, flaky, tasty fish--that is sustainably harvested. It's funny, as a chef in the Midwest, I don't have an ocean to fish a day's drive away but Barber does. Unfortunately, that ocean a day's drive away cannot really provide him, and many others anymore with what they are looking for.
If business didn't have to win out at the end of the day, I think Barber would do this--not serve the kind of fish his customers are looking for at all and really make a statement. When the customer asks why he isn't serving that kind of fish the staff will tell them why and the customers will have really learned a lesson.
art, I might have missed it, but I don't remember Barber mentioning that he is actually using this fish in his restaurant or flying it anywhere.
I think this is an excellent talk. Here in British Columbia, most folks understand fish farming to be an unsustainable industry that causes serious damage to our ecosystems and wild fish stock. Learning about this other type of fish farming is certainly eye opening, for me.

You're right dingdong, he may not be using this particular fish in his restaurant but I believe he heard about while researching an alternative to the previous farmed fish that he was using and found out was unsustainable.
I agree with you 100% that fish farming can be unsustainable and we should learn about all advancements in farming techniques.
